Buckwheat is also an important staple here in Japan. However, for whatever historical reason, it is almost exclusively made into noodles. It is really fascinating to see so many recipes that utilise buckwheat. Whilst we Welsh did not use buckwheat, our Celtic siblings in Brittany are well known for their buckwheat crêpes and 'galette'. (Welsh language and culture is very similar to the Breton language and culture).

I assume you are using dry roasted buckwheat KASHA. Is this correct? Which is different from raw buckwheat.

Sorry darling, this is nothing like it! Beef Stroganoff is thinly sliced BEEF and mushrooms, cooked together and usually eaten with sour cream on top. Look up the recipe. Best wishes to you.

By the way your onions will never golden if its steamed in with the meat. You have to cook separately with little fat or oil.

I tried cooking buckwheat 1 cup buckwheat with 2 cups of water and as soon as it started boiling within minutes it had turned to mushy cream. I don’t like it like that. What am I doing wrong?

If it’s raw buckwheat, it needs to be rinsed four times and then use equal amounts of water and grain.
