The morning is my energy time too. Late afternoon I start wearing down. I often try new recipes on company lol!! Not always wise but after cooking for 5 decades you get a feel for a good recipe. Love your channel. Keeps me plugged into my Canadian roots. We lived in Canada 15 years and all our children were born in Canada.

Watching you cook on your flat top electric range made me remember why I love mine! The flat top has space to move pots around and put a ladle down. When I cook at my daughter’s house on her gas stove, I don’t understand why anyone would want the open flames and the spilled food between the grates on the stove. Cooking should be fun! I remember cleaning a past gas stovetop! Work work work! Cleaning up! Urge!

Chelsea and Dan, I am proud of you too for what you have accomplished on your land. Chelsea, I'm proud of you because you have taught me a lot in homesteading and how to cook from scratch. You're one of my most favorite KZbin. Videoers that I watch all the time and Chelsea I try to get watching your video everyday and less. I forget about it then I don't watch it but most the time I go back and I watch all your videos for the last year or so. I have been watching your videos and I do want to say Dan had done a very good job and what he had done for the land on your property. Chelsea and Dan ❗❗❗😊

I seen it for about 4 or 5 years now on how you do your garden and do your gardening. I really love what you do in gardening. You're one of the ones that I like in gardening every year when I watch people do gardening. Chelsea ❗❗❗😁

Chelsea just wanted to let you know the homemade pasta you don't have to cook it first when making a lasagna. If you make your sauce a little more runny then usual it will cook in the oven. I do this all the time.

In Australia your white sauce-minus the mushrooms is what we use as a Bachamel sauce for the lasagne. I’ve never had one with cottage and ricotta, will have to give it a go!

I found another Canadian You Tuber that I like so much. Love his “accent” as I do yours. His channel is called Traplines and Inlines. He started his channel 0:12 when he was still in high school. Traplines because he was trapping coyotes and Inlines because inline is a kind of truck I know nothing about. A year or so ago he started building a log house all by himself. He felled most of the logs. Now he had reached the tops of the walls. It is a wonder to watch him maneuver 62 ft logs in place. Give his channel a look. Traplines and Inlines. Dan might like it. 😊

I love watching how others construct lasagne as a cook as one of my trades it is different. I make a béchamel sauce put a very thin layer of meat sauce then lasagne sheets more meat sauce bechamel sauce more sheets and repeat top last layer of lasagne sheets with bechamel sauce top with mozzarella cheese and fine bread crumbs. Those French bread sticks turned out gorgeous.

Since you are baking the dish with sauce, you don't have to pre-cook your noodles - if you put them in raw they will soak up the sauce a bit more - you get the starch they have released into the baking dish - so overall a thicker more flavorful lasagna. Raw pasta, fresh, cooks in 2 minutes - so you don't have to pre-cook like with dry. I also use cottage cheese - as it is so much cheaper - but I usually pulse it with a bit of heavy cream to get a smoother texture. With spinach - you have to squeeze all the water out - otherwise your dish will definitely be watery. Not that you asked for tips lol
