Making Ube Jam with a Thermomix

Who is craving legit homemade ube right now? After watching our latest documentary, we went ahead and made our own version here at the studio. 💜 We couldn’t make Erwan and Chef Martin do the hard work for us, so we made do with a Thermomix! more like a puree than a halaya. halaya is grated to prevent it from being super smooth and then cooked and mixed, just like how some sausages are not processed to oblivion but massaged with ice.

Is ube usually darker? I don’t see it often and last time I did it was very dark purple and I’m curious what’s more common or if it’s dependent on ripeness.

before the pandemic I was able to buy raw Ube (has bark like covering) 80 pesos per kg in Tagaytay. Peeled and boiled in alittle water 10 mins in I got the Ube mash added condensed milk alittle salt not much preparation

In Malaysia, Thermomix is too expensive here with our low currency exchange rates. RM7k is worth 10 months rent for the average small house with no land. We have alternative to that called thermal blender or smart blender. It doesn't have a touchscreen like the Thermomix but have buttons like an electric pressure cooker or smart cooker. The price is also 20 times less expensive than the Thermomix which is around RM400 or less.

taro and ube are different.. taro here in the Philippines use for cooking.. and Ube use for desert. Taro in filipino term is Gabi.
