Can I Deep fry the potatoes instead of baking?? Visited from Lisa's channel.
@Feelgoodfoodie
@Feelgoodfoodie 3 жыл бұрын
Yes! Most people will prepare this dish by double frying the potatoes: basically, you’ll deep fry the potatoes first alone without any seasoning or sauce. And then shallow fry with olive oil, pepper, garlic and cilantro. A second popular method is to boil the potatoes for 10 minutes to lightly parboil them and then shallow fry the potatoes with the fragrant sauce. This reduces some of the fat and calories from deep frying them.

I made your recipe and did a hybrid of slightly frying & oven in a cast iron pan with grape seed oil and then adding the garlic/red pepper/cilantro sautéed in olive oil to finish them off & they were the bestest ever! So thank you for your inspiration! Love your recipes!

Guessing Batata means potato. Someone below said it is Hindi for potato which is cool. In Latin Caribbean we call sweet potato "batata" which just reinforces how much we all share in common. That said I am not a big fan of spicy so I would prob lower the heat with maybe smoked paprika or cumin or even adobo. I would think any kind of spice would work. Everything else about the recipe is grand.

How long can you store them in the fridge if I make it in advance and is it okay to warm up in the microwave
@Feelgoodfoodie
@Feelgoodfoodie 3 жыл бұрын
Store any leftovers in an airtight container. They will last about 5 days in the fridge. To reheat, just place in the oven at 350°F for 5-7 minutes or in a toaster oven. You can also reheat in the microwave, but the potatoes won’t retain a crispy texture that way!

So glad you enjoyed the taste! It might help to only flip the potatoes once at the half way point. Moving the potatoes around can interrupt their crisping factor, so leave them untouched until they’re golden brown on one side before flipping them.
