I’ve always said, if anything is going to pull this country out of the hole it’s digging itself, it’s going to be the wisdom of the old timers...like my grandparents, who raised my folks on farms. You, dear lady, are keeping some of that wisdom alive and recorded, so those of us who weren’t paying attention, or didn’t have the opportunity to, can apply it. Thank you Mary.

I put caraway in my sauerkraut, me and my husband both love caraway. I also love my rye bread with caraway. When I was young we fermented in a crock in the basement and covered our kraut with grape leaves to hold it under the brine i used them over pickles too. I never thought about reducing salt. I also put bay leaves in pickles.

Always a wealth of information Mary thank you.. I am preparing to ferment but need to research enough info to actually be confident enough to take the leap… I do make milk kefir with raw milk almost daily and have become quite comfortable with that so I really want to try cabbage 🥬 with mixed veggies like carrots and onions etc … then will move on to sourdough bread 🍞… my ultimate goal…..I may become a pest 😂😂😂😂😂but definitely relying on your knowledge and sharing your experiences/expertise ….again thank you 🙏 Mary so much

Yes when I make my beet kavas it comes out salty. It's obvious I'm adding to much salt. Lol Thank you. You're a great teacher and I'm learning to eat healthy and loving it. You're the best on KZbin!!

I am such an eye-baller! The only thing I measure is my pickle brine, I have it written on the half gallon jar that holds my brine:) If my cabbage is not covered any more - because I let it sit in the basement, check it now and then and if it needs topped off I pour some on. Yes, every now and then my sauerkraut gets a bit too sour, but eaten with other foods it is usually not a problem. Thanks for all your great tips!

Hi Mary I googled Kahm and it may be that. I will check it again tomorrow and see if I am able to skim the top off the sauerkraut. I hope I haven’t lost this one. I will definitely try again. I don’t give up very easily. Thank you for your videos. I’m learning all the time 🤗

Ive been fermenting and pickling for about 4-5 years now mostly basics fruits and vegetables..Sandor book among others were really help-full. Ive having got around it but wine and spirits are my next project Sandor Kat book has inspired me to five it a try.

Thank you for all the information! I must order the referenced books as I am still new at this. For years I've been fermenting cabbage, but never ventured out into new items. I did apples the other day, and it failed. Way too much salt, so since I'm a huge fan of apples, I really want to get this down right. Thank you again, and stay well and safe....we love you!

Mary! I just discovered your channel yesterday, and I love it!!! You have so many videos on things my sister and I have been exploring...I love kefir! I didn’t know you could make your own! My grocery store stopped carrying the plain variety which is my favorite. I love old cookbooks. I just bought an old Fannie Farmer cookbook and an old Toll House Tried and True cookbook from amazon. We have a Half Price books in Indiana too! Love it. I think my son is dyslexic. I’m a high school science teacher. Can you tell I’ve watched several of your videos already? I’m going off on those rabbit trails. Oh! And aprons! I just made my sister an apron for her birthday in January. I made the pattern to look like ones my grandma used to wear. I am so pleased to have found your channel. I’m already a devoted fan. Love Texas too. I’ve been to Dallas, and Gail and a few other places. So beautiful. Enjoy your vids and appreciate all the effort you put in; however, one thing I keep seeing repeated by many people is about chlorine Many municipalities in the US have switched to using chloramine, which doesn't break down (why they have switched) even with boiling. The only way to remove chloramine is by treating it with various devices or by distilling it. Filtration will not remove the chloramine, nor will adding salt, boiling, or letting it stand.

I'm a salty viewer. With regards to fridge storage: Take an unpowered thermometer (no batteries, big dial) and test various locations of your fridge. The way fridges are chilled is through a blower fan, which *can* mean your top shelf chills better, which means it's a colder zone. So know your fridge, especially with other products in it.

Hello Mary. I do have a question after watching this video. Will it hurt to add vinegar to the ferment liquid. Like with sauerkraut does that sour taste develop over time. That's the taste I love. For example, I want the taste of store bought giardiniera. Love the learning process in watching your videos. Thank you.

Hi Mary, thanks for another great video. I followed your instructions for sauerkraut and I think I jumped the gun on putting it in the fridge. You've answered my question regarding it being too salty, however, its not very 'sour'. Can I test the PH after it has been in the fridge for a couple weeks? Will it continue to ferment once its in the fridge, or do I really need to start over? I'm on to your sourdough next! You are such a valued and trusted resource and I am so delighted to have found your channel. Blessings fro Canada!

I love your videos & advice. Love the Teabag idea!! But I didn't get what to do if the brine is too salty even after all is DONE. I have a beet slaw that the salt level never calmed down. Is it a BUST?!?? THX

I did the ph test on my ferment that I started 5 days ago and it was at 3.5. I think that it is ready! Do I take the wait out of the jar and put a canning lid and ring on the jars, than put them in the refrigerator? O r do I leave the glass wait in the Jars. Do I need to burp the jars after refrigeration? I did onions and parsley in one canning jar and cauliflower in three others. All had a ph of 4.0 and below! It is very warm here at present, so I think that it helped the fermentation take place faster. Thank you for the videos!

I did peppers, scallions, radishes, Carrots, cauliflower, a few garlic cloves, and celery. I live in Florida. Keep the house at 78 with air on. Like you said, after 2 weeks the pepper and celery are mush. It is still very salty after 2 weeks. Smells great. I put it in the fridge. Hopefully that will cut the salt back. I never saw any bubbles but could smell it brewing. No rot or mold. Looks good. Is something wrong that I didn’t see bubbles?

Formants can be very persnickety. It’s really a process of trial and error. In warm weather I would not leave a ferment on the counter very long. Whether you see bubbles or not, when the temperature starts to get over 75°F, ferments struggle. In warm weather, leave your ferment on the counter for a few days and then refrigerate it. The fermentation process will continue in the fridge, just much slower. After about two weeks in the refrigerator the vegetables will start to absorb the brine and become more flavorful and the brine will become less salty. When you go to taste your vegetable it should be very tasty and any brine clinging to it should be less salty. Hope this helps. I fermented some carrots sticks I used the easy grip fermenting lids After 7 day I checked them for taste they had a white film on top so I scooped it out and rinsed the lid and glass weight I Used the pump that came with the lids as directed will my fermentation be ok to eat I will buy the strips you suggested that’s a good idea

Hi Mary, I made the beet, cabbage, 1 apple, 3 cloves garlic, 1 clove, 1 small anise and it came out so DELICIOUS! My neighbor loves it. Thank you for inspiring me to try it. But I want to make one with lots of carrots, and other veggies. Can you use beans too? Can you make some more sauerkraut with other veggies besides cabbage?

I used your recipe to make pickles. After about 5 days When I tasted them I could almost feel my blood pressure rise from the salt. Ok, maybe I didn’t wait long enough but my biggest complaint is that the skin on the pickles were tough as shoe leather. I used bay leaves for tannin. What would cause that tough skin.

Hi Bonnie, these are great questions. First of all, there can be variations in cucumbers, so that can play a role in the toughness of the skin.. Second, there are variations in fermentation times so your cucumbers may need to ferment longer. Keep them on the counter and continue to test the consistency. With the weather warming, you will want to refrigerate them within 14 days. In the refrigerator, the fermentation process will continue but at a much slower rate. Over time, as the cucumbers absorb more of the brine, they will become tastier, and the skins should soften. Ferments require a lot of patience. Unlike pickled foods that are made with sugar, salt, and vinegar, they are not ready quickly. ❤️🤗❤️

Hi Mary, Can I add more fish brine to my sauerkraut because after a week , some of the vegetables were out of the brine solution as I did not have a weight, but initially it did have a weight . Then after 6 days I took off the coffee filter top and sealed it tight. It tastes ok. I have added fresh brine to it so all veggies are under it .

Hi thanks for the sauerkraut video. Help, I wrote down the suggestion of 2% salt but I told my husband to use 20%. How can I fix my salty sauerkraut. I just started it today. . Can I rinse my cabbage and just add clean water to my cabbage? I made 2 small cabbages, a total of 2 pounds of cabbage & 4oz of salt, YIKES. THANKS AGAIN

I've had my kraut fermenting for 7days. i have it in a regular mason jar. i have burped it once a day. my liquid has almost completely bubbled out when i open the cover and release it. What do i do. My kraut only has salt in it,

When you have your kraute sitting I covered my jar so it’s dark on my cabinet I have the cremating tube in it it was full of liquid when I checked it so I dumped some of it out tilted my jar was this the right thing to do? No I hope air didn’t get in it. ? Also can you take the tube of before it’s done and check inside or would you have to start over?

When I made giardiniera, it didn't smell very good. I let it ferment for 4 days and then put it in the refrigerator, and it doesn't smell in there. BTW, it tastes great! But is it normal to smell bad while fermenting?

Hi Rebecca, That is a great question! Can you describe what you mean by "smell bad" - that can mean different things to different people. Did it smell like acetone - nail polish remover? That can smell "bad" to a lot of folks but it is just the "smell" of good bacteria. Ferments can also take on a strong alcohol smell which can be off-putting to some. If it has a nice tang to the taste, it sounds like it is OK but if the smell is very off-putting, rancid-like, you may want to throw it out. But it sounds like once you refrigerated it, it smelled and tasted OK. So maybe it is OK. Were you able to test the acidity with pH strips? Love, Mary

Thank you Mary for your response. To me it smells like I should have taken the garbage out 2 days ago. My fermented carrots did not have a bad smell. Maybe the cauliflower and onions just have a different smell while fermenting that I need to accept. In any event, it tastes great, so I will carry on with more fermenting. Thanks for all you do.

I am making the tomatoe basil ferment. I opened it and changed lids, it was bubbling over so I cleaned up the oversell. Now I hear you don't want air getting to it. Did I ruin it? I think tomorrow I need to refrigerate it..

Hi Mary. I am definitely going to try the cucumber pickling method you use. I was wondering about fermenting lemons and lemon juice. I know it can be done, but the pH has to be adjusted. I took a couple of years ago some apple juice and set it in the sun for an hour or 2 for a couple of days. I had something working like crazy. Now I never added any sugar so some kind of local microbes were fermenting it. IDK what I made but it definitely fermented. Do you have any idea what was made. Not adding sugar, it didn't become vinegar. But it wasn't alcohol either. And there was sediment on the bottom. I would say from yeast working on the sugars there and dead yeast.

Hi Mary! Thank you for all your videos. I'm learning so much! I've started some sauerkraut for the first time. A couple of my jars have started to show what I think is mold; these little white balls floating at the top of the brine. I've heard that that is normal but is very off-putting to me. Is this safe? How do you tell whether it's the "good" mold or bad. Thank you!

I’ve helped my Dad make large crocks of kraut lots of times. Last year, my kraut went bad. This year the kraut is perking along, but disappointingly slow. This year, my sea salt and spring water brine is 2.5% by weight to the nearest tenth of an ounce. Same for salt on the cabbage. House temperature is about only 67 in the day time, and 59 at night or if I’m not home. Not being in the 70s seems to push fermentation into creeper gear? In addition to slowing down the fermenting process, what other side effects should be expected? Thanks for any help you can provide. Courtesy of Half Vast Flying

as soon as I will start consuming fermented veg, air would come in to fill the gap, is it just normal, or how to manage it, because air or oxygen is not good for the stuff

Hello Mary. I have a problem with sauerkraut fermentation at the moment. This is the second batch that’s done this. Is it alright to eat. I’ve thrown one lot away already. I have a white cloudy film all over the top of my sauerkraut and I noticed today it’s even in my ACV, which it hasn’t done it in that before. Please advise. What am I doing wrong. Thank you. 😊

Hi Jacqueline, I understand completely. Is it fuzzy? If so, it is mold and you need to discard it. However, it sounds like kahm yeast. Look at a picture on the internet. Kahm yeast is not a problem. Just scoop it off and continue with your fermentation. Keep me posted. Love, Mary ❤️🤗❤️

Hi Mary! Me again (you helped me with my acv question a few days ago) I began my sauerkraut last Monday (11th) and it is well weighted under water. But it really hasn’t changed much color and it definitely hasn’t bubbled. I do ‘burp’ it every day and it does burp! Haha. But, I just wonder why it hasn’t bubbled at all and the color hasn’t faded really. It’s in my pantry where it’s a bit warmer than the kitchen (it’s winter here). Thanks for your help!

Hi Pamela, So happy to help. Hmmm...sometimes ferments can take their sweet time. But you are making sauerkraut at a good time of year for your climate. Sauerkraut likes to ferment between 68F and 72F but can tolerate 65F. (I believe this is 20C - 22C and 18C, respectively.) if you are getting a “burp”, it is fermenting but can take quite awhile before it changes in color. Let it ferment for about 14 days on your counter and then transfer it to your fridge. Overtime, the cabbage absorbs more of the brine and will soften and change color and become quite tasty. Hi Mary.. this is the third week of my sauerkraut fermenting.. I tried it and it is very salty. I don’t know whether I should drain the brine aside, and rinse the kraut with filtered water, then add the drained brine.. OR what should I do?? The fermentation never bubbled, color has changed and there is no mold or anything weird. Help?

Hi Mary, I am having a hard time with my catching a wild yeast! I am using plain bleached flour because it was all I had. But I switched over to unbleached. Still it is very slow going. My kitchen is rather cold and we have well water. I started it on Good Friday, and I have made some bread twice, but it was not a success. It just didn’t rise hardly at all! But still if cut very thin and toasted it was good. But very hard to cut through. Way too dense and heavy. Not really done. So, if I keep on, will it eventually get there? It does have some nice bubbles but not foamy at all yet. Can you address that? Thank you. It is still out on the counter and I feed it twice a day.

Hi Cassandra, I understand completely. Sometimes getting a sourdough starter going can be VERY difficult. There are SO many variables as to the conditions in your kitchen surroundings...temperature, availability of natural yeasts in the air, the weather, on and on. It can take a lot of time and patience to get a traditional flour starter going...and sometimes, you may have to revert to some other options of fermentation to raise bread that would work better given your kitchen conditions. I have some videos coming up over the next few weeks where I will be exploring these options. But at this point, what I would suggest is that you feed your starter every 8 hours and that in place of water, you use a simplified version of yeast water. Traditional Yeast water is a bit more involved than this method (and I’ll be showing the detailed method in an upcoming video) but what I would recommend is putting some dried fruit in a pint sized jar - about a 1/4 of the way full. Then I would pour some water over the raisins - up to about half way full. Leave this on your counter for a few days, then strain the water and use that, along with your flour, to feed your starter. This version of yeast water may jump start your starter. You can use any type of dried fruit if you don’t have raisins. You can also use fresh fruit but it does not work as well. Also, if you can try and keep your starter in a warm place...maybe top of the fridge or in the oven - tuned off - but with the electric light or pilot light on, that might help. Cassandra Casto - I am very sympathetic. Sometimes it can be so thought to get these starters going depending on where you live. If you are able at some point to get some whole wheat ... or even rye flour, try a bit of that in a feeding. It can do wonders. And then once it’s strong, you can transition back to all purpose flour. We’ll tackle this together. ❤️🤗❤️

Hi Mary - Help! I followed your recipe for the fermented red cabbage to the letter and it’s been sitting on the side in an ok temperature since 18th August this year, I came to taste it today and it tastes and smells ‘earthy’ and dull - not at all tangy. There’s no mould on it and it’s all submerged and weighted. What did I do wrong??

probably your salt got other additive that stop the bacteria from growing. just make it again with different brand salt. things should be sour even in a couple days, at least for me.

I am puzzled as to why my cabbage is not fermenting. It has been in jars on the kitchen cabinet {covered} for about 3 weeks. It has not bubbled. It is not soft or dark but has a slight odor.

Maybe I missed the lesson when you talked about this but why do you call some of these 'pickles' is you are not using vinegar and sugar? I thought there was a distinction between pickles and ferments.

Great question. I use the term “pickles” when I am referring to fermented cucumbers...pickles. 🤗 Yes, “pickled” is with vinegar whereas ferments are not. Do you enjoy making traditional foods?
