I love how you break everything down using your cute and relatable characters, making the information seem less daunting. It's 12:30AM and I wanted to learn about fermentation for the sake of understanding kombucha-making. You just taught me the legitimate process on a cellular/molecular level in 30minutes of watching/re-watching. Incredible. I now understand aerobic vs anaerobic cellular respiration, the basic role of glycolysis in each, and how in anaerobic cellular respiration the fermentation process (which is tacked onto glycolysis to regenerate the process) is different based on whether it's alcoholic fermentation or lactic acid fermentation. I feel like a genius. Thank you for an incredible presentation!

THAT I UNDERSTAND IS Fermentation, chemical process by which molecules such as glucose are broken down anaerobically. More broadly, fermentation is the foaming that occurs during the manufacture of wine and beer, a process at least 10,000 years old. The frothing results from the evolution of carbon dioxide gas, though this was not recognized until the 17th century. French chemist and microbiologist Louis Pasteur in the 19th century used the term fermentation in a narrow sense to describe the changes brought about by yeasts and other microorganisms growing in the absence of air (anaerobically); he also recognized that ethyl alcohol and carbon dioxide are not the only products of fermentation.
