This delicious and vibrant ketchup is a great way to make those beetroots last!
What You'll Need
1kg beetroot
2 garlic clove
tsp cumin
tsp chilli flakes (optional)
Salt and pepper
100g sugar
190-200ml any vinegar
Method
Step 1 : preheat oven at 200c and place your roughly chopped beetroot and garlic in the oven, drizzle with olive oil and leave for 40 mins until tender
Step 2: Once your beetroot is ready, slowly cook your beetroot in a saucepan with chilli flakes, cumin, vinegar and sugar
Step 3: blend at a high speed your whole mixture, if consistency is too thick, add some water
Step 4: sterilise your bottles (dishwasher or in boiled water) and start funnelling your mixture into the bottles, you can keep unopened in the fridge for a couple of month
