carbon dioxide is released during the fermentation process and usually takes about 4-5 days before the bag is the size of a volleyball. It will Pop if you don't catch it in time. Usually, the fermentation slows down considerably after a couple weeks. Due to the carbon dioxide in the bag, you can let your peppers continue for months if you wish. It continues to ferment just more slowly. Remember, The Mcillhanny Family, originators of Tabasco sauce, ferment their peppers for 3 years. Im not waiting that long. A month is plenty.
