How dry is dry? Do the figs have to be hard when they're dry or can they still have some give to them?

I have been drying figs for a couple months now. I found that if I dry them too long they are too hard to eat. Best thing to do is eat them whole drying them so you can test them out in different stages. When they aren't sticky anymore they are usually done.

Hi Nancy, love your passion about figs and I feel the same. May I ask how long you dry the figs for in the dehydrator? And why do you keep the previously dried ones in the dryer again when you are drying the fresh ones?
