Hey Friend, join me in the homestead kitchen as we continue to fill up the pantry with a Fall Garden Harvest. Its time to make one of my favorite soups, Potato Leek! We are making the Best Zucchini Bread and a few loves of Zucchini Cheddar Beer Bread for the Freezer. I can some Hot Sauce for the first time and freeze some brussel sprouts and raspberries. The Freeze Dryer is loaded up twice and we make some stuffed banana pepper and jalapeno poppers for the freezer.

Potato Leek Soup:
4 medium potatoes, cut into 1/2-inch pieces
2 large leeks, thinly sliced
6 slices cooked bacon, chopped
1 tablespoons butter
1/2 teaspoon paprika
2 cloves garlic, minced
4 cups chicken broth
Salt and pepper to taste
1 cup heavy cream
3/4 cup frozen peas
Stuffed Banana Peppers:
1 lb Italian sausage
1 tsp onion powder
1 tsp garlic powder
1/3 cup parmesan cheese
1 egg
1/2 tsp salt
4 oz cream cheese
1.5 cups shredded cheese of choice
24 oz marinara
24 small-medium banana peppers

I prepared a huge pan of lasagna in glass pan covered with aluminum. Overnight, while in the fridge with apples next to the pan, the aluminum foil 'melted' into the tomato sauce. I opened the pan before putting into the oven and there were drops of aluminum on top!!!!!! The ripening apples had let off gasses and the acid in the tomato juices reacted with the aluminum foil and I had to throw out a very expensive large pan of supper. Just passing along first hand experience of using aluminum foil with tomato sauce. I think if you put a layer of parchment between the bottom and food or plastic wrap between foil covering and tomato sauce, but I wouldn't try it ever again. I was just lucky I saw the evidence but even a little getting into the food where it touches on the bottom is too much for me. Acid and aluminum just don't mix. I LOVE your videos and watch them as soon as they come out so I don't miss anything. Please, please don't take this as criticism but only as a safety tip. I also love your tip on using the veg peeler to scoop out seeds in peppers - why haven't I ever thought of that!so practical and easy.

If you freeze dry the zucchini shredded you can use it in some recipes as bread crumbs crushed up( like meatballs or meatloaf)!

Ziplock bag with a corner cut off might be easier/cleaner to stuff the peppers with.

I keep a jar of vinegar in the fridge and as my peppers are ready to harvest, I simply deseed and add them to the jar. Once I’m ready to make hot sauce, I use the jar of peppers from my fridge and the vinegar is infused with flavor. I actually keep Tabasco infused vinegar in the fridge for greens, fish and eggs year round. The only thing I do to make it is throw whole peppers in a bottle of vinegar. Easy peasy.

For the poppers, I put my filling in a zip top bag, snip one of the corners and then pipe it into the peppers.

I saw a hack for a DIY ‘bag holder’ using your mason jar lifter/tongs - when they’re in the ‘open’ position you can put a zip lock bag in the middle and fold the open edges over the two handles to keep them open while you fill them!

Don’t buy a bag holder. Tip your jar lifter over. Handles on the table with jaws open. Place the bag on either side of the lifter part and fill away.

I do! I actually have at least 6 gallons freeze dried 😬😂 I’m just out of space everywhere! I figure some jams could be given away this Christmas ☺️

I’ve always done “jalapeño poppers” halved, cream cheese, half slice bacon. Never considered doing them whole. Thank you! I rarely comment but enjoy your videos very much. Will do better. ❤ Thank you for sharing. xo

I freeze dried all 30 gallons of raspberries this year. Saves freezer space and the mylar are easier to store in the totes. I think you meant to say your freeze dryer was cooling down and not warming up? Lol Going to try fire cider this year. I freeze dried chipotle’s but unsure of what to do with them? Maybe making adobo sauce, and rehydrating them in the sauce? I love potato leek soup. My first try was in 1987, in Key West FL! I freeze dried shredded zucchini- it works great for bread/muffin recipes.

I have made fire cider with thawed jalapenos that I had frozen that I cut in half and froze. The fire cider turned out wonderful.

All you created today looks scrumptious! As children were resting, I was prepping for this week's menus. While doing so, I watched this video....a wonderful way to brighten my day! I have never stuffed banana peppers, and have many of them in the garden. I usually pickle them for sandwiches/salads, but oh, the look of the stuffed had me drooling! Hey Kelsey have you seen where Harvest Right made where you can change the 4 tray to a 5 tray? Becky at Acre Homestead just did that and I thought you could probably put having more trays to use also! 🥰 Really enjoy your videos!

Pemona’s pectin is the best! All I ever use. I try to find recipes that are already made but definitely just create my own or tweak the recipe to use with Pemona’s. There’s a little informational fold out thing that comes with the pectin & tells you basic recipes & what amount of pectin to use per cup of fruit & amount of sweetener (of choice) for creating your own recipes. Hope you give it a try 😊

Pomonas is all I’ve ever used. I love it. I’ve heard some people have had issues with it not working, but after hundreds of batches, I never have.

There have been many, many, cases of identity fraud and bank fraud tried to Temu. Also, forced labor practices are how they have such cheap prices. I’m not trying to lecture you. It’s just information for you to do with as you see fit.

Use your jar lifter from canning (turned upside down) or beverage pitchers/recycled food storage containers. Anything that will hold the bags open and stable will work, and no extras to buy or store. Also, I fold the tops of the bags over a couple of times, so any mess or drips is inside the bags for easy clean up.

Just to make sure I'm not missing something, what's the link between soup and nursing? Assuming maybe it's something you packed alot, but just want to double check all your patients weren't there because of soup consumption or something 😂

I’ve never had a leek but that potato leek soup looked delicious! I think I might try my hand at growing leeks next year. My absolute favorite way to use zucchini is in chili. It sounds really strange but I’m telling you it’s the best chili ever! The recipe I follow is from Laura Fuentes and it’s called Paleo Chili. Those jalapeño poppers looked so good! I don’t eat pork so I’d probably sub with turkey or beef bacon. Great video! Thanks for sharing :)

Can you actually get the kids to drink the fire cider? I made stuffed banana peppers using ground beef that I browned, seasoning, cream cheese, and shredded cheese. I par boiled the peppers, stuffed them, and wrapped them in Crescent rolls then baked them.

Great ideas Kelsey. I have some peppers that are destined for hot sauce for my husband. I’ll give the quick and easy recipe a try. I don’t recall if you said what the heat level was like for the sauce. I don’t eat hot sauce but my husband likes it hot! I don’t recall where I saw this idea but have you ever sliced zucchini really thin and sprinkled the slices with vinegar and a little salt then freeze dried them. Apparently they’re delicious. The soup looks amazing and definitely a good choice when you want something to make you feel warm and cozy! As always, thank you for the video!

Well, I may not be the best judge when it comes to heat cause I’m a wuss 😂 I personally think it’s pretty hot, but my plans are really just a little mixed into Buffalo chicken dip and maybe wings. The heat level will really depend on which pepper you use. I have thought about doing the zucchini chips! I think I’m the only one who will eat them though and I’m currently full carnivore for the foreseeable future. Thank you for watching friend! Enjoy your day 🤍

When I make Popper's I use a pastry bag to fill them but I was wondering if when making the stuffed banana peppers do you think that I would be able to use a pastry bag to fill those as well?

Tried maple syrup in the lemonade. Do not recommend. Did honey for the ice tea too. It might grow on me. I've been going for unsweet tea out of the house. Life is hard. Lol

Question on the freeze dryer - if you combine different strong smelling things, does it affect other not so strong smelling items? Say you freeze dry onions and then put something else along with the onions, does the onion smell permeate it all?

I personally have not noticed that happening. I try to combine loads with like things but that doesn’t always happen. I had an entire load of garlic and was worried it would stink up the whole freeze dryer and you couldn’t even tell there was garlic in there!

I have shown our layer hens, they are in quite a few videos. We aren't raising the pig; our friends are so that's why you don't see him! I haven't shown any of our meat bird process because I just wasn't sure there was enough interest in it!
