Hey Friend, Summer is coming to a close, but we keep pushing on preserving all we can and filling the pantry for winter eating. In today's video you'll find a bit of everything, Freezing, Canning, Baking, Freeze Drying and Fermenting Produce from the Garden. We pressure can Tomato Basil Soup, Water Bath Can Tomato Sauce, freeze some Roasted Red Pepper Pizza Sauce, freeze some Raspberries, Freeze Dry some Herbs, ferment some Jalapenos and Bake with and Freeze some Zucchini!

8 lbs paste tomatoes cored and halved
5 tsp salt, divided
2 tsp pepper, divided
1 tbsp olive oil
2 cups chopped onion
4 garlic cloves, minced
1 cup dry white wine
4 cups chicken stock
1 cup tightly packed basil leaves
Processed in a PRESURE CANNER at 10lbs pressure(check your elevation) for 50 min(pint) or 60 min(quart)

Roasted Red Pepper Pizza Sauce:
6 Red Peppers, roasted and peeled
1/2 cup toasted walnuts
2 heaping tbsp tomato paste
2 garlic cloves
1/2 cup olive oil
2 tbsp red wine vinegar
2 tbsp raw honey
1 tsp paprika
1/2 - 1 tsp salt
Combine all ingredients in a food processor until blended smooth. Store in freezer for 3-6 months.

Incredible harvest. I have had bad luck with my Amish paste. So much bloom end rot. What was the name of the paste tomatoes you like? Thank you.

Thank you! Its hit or miss for me with the Amish paste, I haven't had any blossom end rot this year! I really like both the Hungarian Heart and pink oxheart equally!

My grandkids don’t like the seeds either so I always run my blackberries and raspberries through the food mill with the berry screen on it. They love it like that.

I do the same. The berry screen does a great job and leaves you all the pulp and not just juice.

You could always use the strawberry lemonade concentrate in the ball canning book but Chang out the strawberries for raspberries.

Raspberry cherry preserves, raspberry chipotle freezer jam, raspberry pie filling, raspberry red currant jam, raspberry sauce, might be able to make fruit leather with that. Raspberry vinegar, red raspberry jelly. These are in the complete book pf home preserving from Ball.

A little trick I learned a few days ago for peaches ( a bit late since you're done with them) if you use needle nose pliers and poke them through the top and grab the pit, twist and pull the pit right out (before blanching to remove the skin).

Running the fruit while theyre still fresh through a foodmill can take out the seeds effectively before you freeze them...the kiddos will surely love it

Make raspberry vanilla syrup. For every pound of berries use 1 cup of brown sugar and 1 tablespoonor lemon juice. Put the berries in a pot and top with the sugar and lemonjuice. Cook on medium low for 15 minutes. Strain through a fine mesh strainer to catch the seeds. Add 1 tsp vanilla extract or paste. Hot jars, hot canner. Waterbath for 10 minutes for under 1k feet.

Frozen raspberries are the best for flavoring yogurt as they melt/defrost and release their juice. Sweeten with some honey over the frozen fruit gives you some solid honey bites as well. Delicious 😋

I just processed6 pints tomato sauce. And still had 5 on the counter. The garden will be popping again. Uggh. I’ve made salsa, chili sauce, cowboy candy, pickles, hot wax peppers, relish, zucchini jam and onion jam for burgers

Freeze drying your skins from your tomatoes makes a good powder from what I've seen.

I have heard the you should add a little water between the roaster bottom and the roaster pan to encourage even roasting... Just a thought.

Hi Kelsey! Love watching you manage your homestead food supply! It’s truly inspirational, especially as you’re also a Mom of young kids! When I grow up I want to be just like you! Was thinking about your raspberry abundance issue…. How about making some raspberry lemonade concentrate? If you have a Vitamix, those seeds should disappear in the blending process (I think 🤞)

Put a rubber washer on the handle that twists in, add a bit of oil to that area. Poof, the leak is fixed! I have the same mill and my husband solved this issue for me.

I love your soup it looks so good nothing better than grilled cheese and i make them in my DASH air oven I got for $99.00 on sale my daughter every time she visits its the only thing that she and my grandson wants. You have the information on the Raspberry bushes because i am thinking about getting some for my daughters house they bought a old Vermont farm house Built in 1792 and she was born in 1992. They have been doing over. I love your channel and you being real and your kids!!! My little now getting big to fast grandson Byron Scott just turned in June.

I'm right with you in the fact that I can't say I'll mourn a break from tomatoes (at least not for a month or two). Just pulled the tinest green ones this morning to make some green tomato salsa verde. Such a great way to use the green ones come the end of the growing season. Thanks for bringing us along as you do your preserving and for keeping me company as I slice apples to go into the freeze dryer.

Raspberries are one of my favorite fruits next to mangoes and peaches. I don’t even like raspberry jam so much because over cooking spoils the flavor. My favorite thing to do with them is a European style tart with a sweet crust, a layer of cold custard mixed with whipped cream, topped with a layer of raspberry topping. A small jar of raspberry jam is heated and folded into a bowl of fresh or frozen (uncooked) raspberries and then cooled for the topping.

If you flash freeze everything before you put in freeze dryer you save wear and tear and time in your freeze dryer

You can can them with just a light syrup. We preserve this way for smoothies they work great! I just found your channel. Im going to do some binge watching while canning potatoes :)

I don't like seeds, either, so when I make blackberry jelly, I pour the juice through a canning bag (or cheesecloth) to remove them. It's an extra step, but so worth it!

Maybe, a "concentrate" so it uses less space, then you can use it for drinks, jelly, or syrup for pancakes, etc

My grandmother grew oxheart tomatoes 50 years ago. ❤ Your purple raspberries, are they black raspberries? If so, they make wonderful pastries, pies, and jelly. I am not a fan of jam, because of the seeds.

Love your ✨️ totally glamorous outfit ✨️😅 im all for comfort. And in this season i put on sweatpants in the morning with biker shorts underneath, then shed the sweatpants when it warms up. I do put on jeans to go to town though 😁

Another fantastic video! I think the toys in the background are just adorable! Having the kids help is just great and they are learning and dont even know it! I will have to try those pink oxhearts, they look pretty amazing. Here in MN I am down to a few tomato plants, my marshmallow plants to harvest roots from and my runner beans. With possible frosts a bit north of us this week I think everything is going to come out in the next day or so just for safety! As always I love watching your preserving and baking and your great determination. Blessings as always!

Another beautiful harvest and a wonderful assortment of uses. I’ve been wanting to try the soup recipe but haven’t gotten to it yet. I have been washing and coring the tomatoes as they come in and then putting them in the freezer until I have the time and energy to process them. I’ve heard a couple of folks rave about the freezer pizza sauce, I guess it’s time I gave that a try too! I’ve never grown the Oxheart tomato variety but you’ve mentioned it before so I think I’ll give that a try next year too. Where do you get your Oxheart seeds from? I did grow Amish Paste this year and have had very good luck with my plants. These are the healthiest plants I’m growing this year and although they seemed late to set fruit, once they did it’s been a very prolific crop. No problems at all with the fruit and I’ll do those again as well. This week The Traditional Skills Summit is taking place and today is day two of free classes. Just about the time I was hitting a wall with the garden ‘to do’ list, planning for next year, and of course the ongoing harvest, I am feeling inspired again and ready to move into fall with all the things! I get my seeds from either MIgardener or Baker Creek. My Amish paste have done well too this year, the first time I haven’t had any blossom end rot! Sometimes we need to pour back into ourselves for some inspiration and an added boost of motivation! Enjoy!

An easy ferment that we really like is relish. We shred zucchini and carrot (you could do other veg), add dill and garlic (whatever spices you like), and salt. We eat it on sandwiches, burgers, and brauts.

Hi, Kelsey, you probably already do this, too, but shredded zucchini makes a great addition to tuna patties and meat loaf. They also make terrific fritters. I've combined them with shredded carrots, apples, and onions, depending on the recipe. (:

Raspberries make a nice base for a hot sauce, milling everything after cooking makes it smooth. I had a hand crank mill but they usually require a seed screen...I prefer the old cone mill with a wooden pestle. Less time and money spent. Nice harvesting and putting up!

Even though your day started out "slow," you got a lot of things accomplished. If I were to do half of what you did ... and it would take me 2 or 3 days ... I would be ready for a long nap! Everything looks beautiful in the jars. The Roasted Red Pepper 🌶 Pizza Sauce sounds delicious. I hope you are able to video when you make the pizza.

I use some of my raspberries to make raspberry syrup. My son uses it in alcohol beverages, my husband adds it to his tea, but it would be delicious to add to lemonade as well or use it on pancakes or ice cream.

You could freeze dry those raspberries ( I know you have some already but for freeing up freezer space) and then powder them for adding into smoothies, to yogurt or whipped cream muffins pancakes waffles etc. lovely video. Much love and blessings.

maybe some sort of raspberry bbq sauce or maybe like a canned raspberry marinade. crazy how many raspberries you got though xD i got a golden anne last year that was from someone elses garden and i have it in a pot. we got like 6 raspberries xD and i bought canes from both home depot and sams club and none of them did anything but stay dead xD

I made cran-cherry juice with my extra cherries. You could make cran-rad juice or just raspberry juice. Raspberry syrup is also very good.

Kelsy, did you know if you add a pint or so to your electric roaster under the pan, it will promote consistent heating and reduce items from burning inside the roaster?

I wonder if you could use a saucemaster type thing to run the raspberries through? If it catches tomato seeds, wouldn’t it catch berry seeds? I have no idea, anybody ever tried it?

I really want to try that deliciously looking roasted red pepper pizza sauce. I ordered some ajvarski seeds (spelling?) so excited to grow them next year. Can you share your fermented pepper process? I tried fermenting onions and ginger but I think it went south, did not smell good. I really wantnto try the process again. Thank you!!

@@seedandsparrowhomestead I'm sorry, share the progress as it does the ferment. I didn't use filtered water so that may have been a problem on what I tried. I do use Redmon Real Salt exclusively now!!

@@AshCanyonCreations oh no worries! I can do that! So the biggest take aways I have from what I've learned is everything needs to be SUPER clean, use filtered water(if you use tap water sometimes there is chlorine which will kill the good bacteria) and make sure everything stays submerged so no mold forms. It should smell good, not foul for sure. Keep trying! You'll get it. :)

For the soup, is there a substitution that can be used for the white wine? My tomato plants are finished. I took them out yesterday and took all the green ones inside. With what I have in the freezer, I should get one more canning out of them. I just have to decide what to can next. lol

@@laurielyon1892 From what I've found in my resources its not something that can be substituted in this recipe for safety reasons. I know you can reach out to Ball on their website and they are pretty good about get back to you in a reasonable time frame.
