When I was first married, almost 38 years ago, it was my goal to fix my husband breakfast every morning. He then explained to me, he doesn't like a big breakfast (for breakfast, but we both LOVE breakfast for lunch or dinner). He also said he prefers that time to himself, without any distraction from me asking his questions, etc. It was his time alone with God. I was so happy to hear that, because I've never been a morning person. I love your idea of fixing a week's worth of breakfasts at one time! I, have just learned, at age 61, the joy of making a double or triple batch of what I make for dinner, to either give some away to my daughter's family or my friend, who has been going through some bad sleep issues, or I can put a meal in the freezer for a time I'm not feeling up to cooking. It's been a joy to be able to get a disposable pan, filled with food, from my freezer, and be able to just put it in the oven to bake! I did that with Mac n cheese, but found you need to add milk or cream to it, before baking, as it thickens up when frozen. Adding the milk makes it creamy, smooth, and delicious!

I loved doing the challenge, and I was doing well then I woke up Monday and my fridge was dead. It made me realize how reliant I was on the stuff I had stocked in the fridge. I managed to save a lot of the freezer items but all my dairy, leftovers, etc are gone. I am now making a grocery list to replace some of that and round out the meals I now have to use for anything that thawed.

I hear your heart is torn between getting up to share breakfast with your husband vs getting a bit more rest. You are doing a wonderful job caring for all your family members. I fell out of the challenge pretty fast, but trying it showed me some of what I need to do to be better prepared for emergencies. I bought a small chest freezer, since its just me, 2 dogs, and a cat, and I started stocking it a bit at a time. Bought extra critter foods, and am making extra "canned" dog food as well to keep in the freezer (think Farmer's Dog, but homemade). I've canned mixed berry and strawberry jam, apple butter, and salsa, and I'm looking forward to branching out. Thanks for the inspiration and guidance! Also, may I say, you're looking especially bright-eyed and pretty today! And you may not be the Hulk, but you're a bad-ass momma! One thing, its apparently recommended that you not spray Pullman loaf pans, something about sprays apparently breaks down the coating. Don't ask me details, just passing along something I heard from a pro.

Your soup looked perfect for a warm and cozy evening in! I have never been a fan of Velveeta cheese, even before I started down my own health journey. That being said I always passed on making recipes that called for it. Knowing that I may be able to find a healthy version of it has inspired me to reconsider for those recipes that look delish but I’d otherwise pass on! I have a question about the size of your bread pans that aren’t the pullman pan which I do have and use occasionally. My husband and I were talking just this week about the finished size of the bread I make. When I was buying bread I always bought what I think was referred to as ‘wide pan’ bread. In the video your pans look larger than my regular bread pans. Do you know if they’re considered wide pan size or if they’re just a traditional size loaf pan? I was hoping to find glass but the only size I think fits more like what my husband would prefer, is not glass. If anyone else has recommendations I’m all ears. When you compared your jam to cranberry sauce, my thought was to use it similarly. Added to a meat sandwich or alongside a simple roast meat. I bet it would taste good alongside your meat pie, or added into a pan sauce with pork chops or lamb chops.

lol-I make 4-5 things at a time too. I have freeze-dried cheese sauce powder from Thrive Life and it is awesome to add to soups. It adds a boost of flavor and is so velvety and creamy.

I always make sure to have enough liquid( milk& heavy cream), to submerge my ingredients of my bread pudding. This way your fruit will not burn. I usually use half & half if I have it, otherwise I will make a custard from 3 cups of milk( there will be some of this mixture leftover…that I make French Toast out of…easy way in the oven). I only use three eggs. Otherwise comes out too eggy for us. I had the same problem you did with the cream cheese just melting in clumps. If you want the cream cheese creamy, you have to melt it in a sauce pan along with the butter stirring constantly then adding in your milk. My family did not mind the texture, but I did. If you have a can of pumpkin or just bananas this makes a wonderful bread pudding too. The raspberries gave yours such a beautiful color, but has to be mixed in with the bread and custard and need to let the bread mixture soak while pushing ingredients down to make all liquids are soaked up( around 30 minutes at room temperature), or overnight in fridge. I make lots of bread puddings, because my mother was from Louisiana, and she was making bread pudding before it became popular ( unless you were from LA or live there). 😊I would love to make bread like you do. I need lessons on that. I need to know how the texture feels to know what I did right or wrong!😂

Thank you so much! Anxiety has definitely been a little elevated. I’m on week 6 of an unresolved sinus infection, still having pain, pressure and tenderness. I keep one loaf in the fridge and put the others in the freezer to pull out as needed. I’ll also slice them prior to freezing so I can pull a few slices at a time ☺️

Hi Kelsey. Question about your white bread recipe. I am trying so hard to find a recipe that we all love because I do not want to keep buying it. I want a sandwich bread. Bread for eating with meals I can do but none have been good for sandwiches. Not sure what I am doing wrong. I usually do most of it in bread machine or mixture because of my hands (little arthritis). Thanks for your help.

I've never used a bread machine so I can't speak to that, but the mixer works great for my recipe. I think some of the issue may be the pan you are using and making sure it is kneaded long enough for a good crumb. The pullman loaf pan kind of compresses the loaf for a denser crumb which makes great sandwiches. I find if I try and use the regular loaf pan with open top it tends to get fluffly and doesn't have the stability we like for sandwich bread. Does that help at all?

It’s tight, are you measuring the weight? If so, perhaps increase the weight or increase rise time/temp you are rising at! Honestly bread making and finding what you like is a lot of trial and error ☺️

I've noticed that when I buy bread sometimes you can see the spiral in it telling me they rolled up the dough whereas others you can't. Is there a reason for rolling it over not? I don't remember my grandma doing it growing up and she always made hers homemade. I think I'm fine with it either way but not sure what difference it makes since I have never tried to make it myself yet.
