Isayama wanted it to be unclear whether its nature is divine or something that can be explained scientifically, so trying to explain it with a supernatural microorganism that is similar to yeast is not out of the picture. It is something the author left purposely unclear, and therefore there is room for speculation.

Only issue I have with this theory: If titans are just expanding without changing in mass, why are they easily breaking buildings? When Eren tosses the female titan into the church, she should bounce right off or break her bones, not the building. Also, if mass doesn't change, then technically Reiner (in human form) should be able to toss Eren (in titan form).

well we can assume that the gas build up results in a increase of mass and pressure but once they are killed and the gas escapes all of the escapes making them pretty much weightless

Yeah, I dunno, but it says that they are light in the anime, so they have to have a pretty low density, at least when they’re dead. Maybe they only get lighter after they die somehow? That would explain why the dead pieces were really light but the living titans can still break through walls while they’re alive.

That's with the Titan shifters though. They're uniquely different in that they're more durable than the usual Titans. You don't see the regular Titans breaking walls or buildings but it's Reiner, Annie, Bertholt (sic), Erin etc
