I don't get why he needed to waste food. But if you use something from a can, you should push it more. Add some seasoning. Cut it or something. They may be in a competition, but I am also not too shocked about the one guy using someone's rice if the food tastes good in the end and if they give it to you, but again, it is best to push it and spice it yourself and do something in return. At the end of the day, you look out for your team in the kitchen, and it should not be just an ego trip. Then again, I don't do computations because it can be stressful and toxic. Also, sometimes you are set up to fail because it is rarely a standard setting or has any actual world application. Your manager would not put jarred sauce in the kitchen to trick or bait you. Nor would they put canned food that they did not mean to order. The only reason people do this to themselves is to be on TV and to try and win some money. It is not even that much money.

People do expect better quality in restaurants than at home. That's why it's so much more expensive to eat at a restaurant. Gordon gets upset when people try to sell "home cooked" quality food at "restaurant quality" prices. Frozen food is fine, but unless you work at McDonalds you're gonna need higher standards than that if you want to run a restaurant.
