I have always found chopping vegetables for canning very soothing, it’s a good time for deep thinking…… I am 75 and used to can oodles, for a long time I stopped but your Dad inspired me to start again. Never stop, Emily!

Your cutting board may be kind of small to do this, but with any type of chef knife you leave the tip on the board as if your knife is a lever, and you push the vegetable along with your free hand, under the immobile knife blade. It goes fast, if you just keep your knife tip on the board. Thanks for good, wholesome videos that warm the heart. Regards, from far north California

If the food gives little resistance then you use the point of the knife. Chefs fly through mushrooms with the point because it is lighter and faster but the back of the knife provides greater leverage for a tougher item such as root vegetables. 👨‍🍳🔥🔪

Emily your garden is fantastic. For a first time grower of vegetables I am in awe. Your root cellar is coming on and I am so glad that a young lady like yourself is taking such an interest in this day and age of being self reliant and that you can build and do so much and to operate power tools. You are an inspiration like your dad and your mom and dad I bet (as I am) very proud of what you have achieved. As I watch the progress you're making in this type of lifestyle and keeping in mind your city job and school studies (if I'm not mistaken) I can't help but wonder what direction you will take when you arrive at the fork in the road that points to the type of life you must chose to take then. One has to commit to either or, it can't be both, your dad has proven that. So many other factors will be involved, and I am sure that you will be well accomplished in both, but it may be your personal life that tends to be the deciding factor. For now, it is an adventure, a well-enjoyed adventure.

Super jealous of your awesome looking garden Emily! Great Job! It's tons of work but so worth it. My neighbour has a huge garden and this time of year he sets up a massive outdoor kitchen to do his pickling and sauce making, it always smells great on our street when he does it..I hope he makes extra chili sauce this year lol

Good morning Emily. Excellent video. Everything looks lovely. My favorite method of maintaining a sustainable pantry and stockpiling items long term for the whole family is what I consider to be the most practical, utilizing every type of food storage methods and technology available, both old and new. . Except for the fruits and vegetables that get canned, I keep perishable items like meat, poultry, fish, fruit, vegetables and dairy products in the refrigerator on a short term basis until I'm ready to use them for a big family meal - and for even longer term sustainable storage, a large separate freezer, which can store a half side of beef with plenty of room left over for homemade ice cream etc. . I'm considering upgrading to a walk-in freezer at some point.in the near future, if my plans to open a bed and breakfast come to fruition. Sometimes, however a nice round of cheese can do well for quite awhile on a pantry shelf at room temperature - and doesn't mind even if it has to stand there alone. Store bought canned goods get shelves.in the large pantry closet - several for canned meat like corned beef hash, spam and sandwich spread and another for canned vegetables Bread, rolls, grains, homemade pasta, cereals and the like are stored in special humidity controlled bins I order from Amazon Prime - which usually get delivered to my doorstep about an hour after I order them. . Stuff from the family garden and orchard, like onions, bell peppers, tomatoes, cauliflower, cucumber, pumpkins, carrots, corn celery,, potatoes and yams, cherries, blueberries and strawberries get canned in Mason Jars and stored in the cool, root cellar of this wonderful rambling former farmhouse (circa 1867) I share with my extended blended family and several rambunctious dogs raised on table scraps from the some of the finest food from a plethora of sources both commercial and home based. . There's even a special separate "summer kitchen" which I converted to store butter and ice cream churns, pots, pans, utensils, extra storage containers, foil, bags, cutlery, and other meal related accoutrement. Out back in the woods, just beyond the big pile of wood I maintain all year, (for use in an antique woodstove I keep on hand, in case the power goes out) there's even an old rusting vintage still where my great grandfather made some of the finest corn whiskey for miles. Next to it is the rusting hulk of the Ford Model A he used to transport that powerful hootch by the light of the moon on soft summer nights to his eager customers in a tri-county area. Further into this verdant forest of mostly sycamore, oak, pine and scrub, runs a cool stream into which I occasionally cast a rod or net to catch some Brook Trout, Bluntnose Shiners, or whatever takes the bait (just earthworms for the most part). And yes, hunting season means wild turkey, deer, and even an occasional wild boar. Next week, I'm planning on filing for a permit to 3-D print a smokehouse in order to be able to create gourmet artisan handcrafted, beef, bacon, turkey, and beef stick jerky, which interested local merchants can private label for other people to share with their families and their family dogs. Unfortunately, I had to break the bad news to my free range hens today that due to expected egg shortages regretfully numbered are their days of laying a couple of eggs and then basically taking the rest of the day off with ranging privileges' within the parameters of a few very nice rural acres - parts of which are rich with fat grubworms. There's even a short dirt road between the main barn and the farmhouse which they're free to cross to get to the other side as often as they'd like. My rooster Ben overheard me and he ain't too happy either, knowing full well that due to oncoming egg shortages, he'll be "workin' overtime to make sure there's plenty of eggs for the family and I.

As I was watching this video I noticed a thumbnail of one of your other videos from 2 months ago where you just made those garden benches. I thought man there's so much that's happened in the last 2 months. You've made so much progress! You just keep going and going like the energizer bunny lol Great job on the shelves and the door. I see you used Luan plywood for the door. I used that for a simple dresser for my trailer. Was initially going to use that for the siding inside my trailer but opted for Mahogany for the sides and Birch plywood for the ceiling. Hope you're having a great day!

I'm thinking about doing a fermented hot sauce with my chillies - like a Frank's or Tabasco style, but with much, much hotter chillies. Looks like a good harvest for your garden this year. Will you need to have a heat source for the storage shed, given it's not in the ground?

Every year I do both traditional and fermented hot sauces. I have also done a fermented one after I have slightly roasted the chilies and that is also unbelievably good! I highly recommend trying both ways

A quick tip that might be useful: make your mark and then hold your tri-square on your lumber and slide your circular saw alongside the tri-square and the mark and you'll make a straight smooth cut every time 😉

If you drill pilot holes especially at the ends of boards you will eliminate split ends when you drive the screw in. Alternately, if you reverse drill the screw part way in, then flip the switch back to setting the screw, that will work too.

Miss Emily, if you have a place for them (or know someone who does) you can overwinter your peppers. They're perennials, and my one neighbor got 7 years out of her oldest one before it finally gave up. Just prune back the tops, pot them up and put them in a sheltered area over the winter. Someone's basement, non freezing root cellar, or a greenhouse would be perfect, I reckon. Also, if you have cucumbers that you don't want to pickle, peel them, cut them up and boil until soft. You can mash them and can them as a puree. Just add spices to make a pumpkin pie impostor later on. Sweet Cucumber Pie Recipe: Ingredients: 2 cups Cucumbers; peeled and chopped 1 12 ounce can of Evaporated Milk 2/3 cup Sugar 3 Eggs, beaten 1 teaspoon ground Cinnamon 1/4 teaspoon ground Clove 1/4 teaspoon ground Ginger 1/4 teaspoon ground Nutmeg 1 (9 inch) prepared pie crust Directions: 1) Preheat oven to 425 degrees Fahrenheit 2) Place the cucumbers in a pot and cover them with water; bring to a boil. Reduce heat to medium-low and simmer until tender, 15 to 20 minutes. Drain off the water being very careful, as it will be hot. 3) Blend or mash until smooth. Measure out 2 cups of the blended cucumber and pour into a large bowl. 4) Whisk into the blended cucumber; milk, sugar, eggs, cinnamon, cloves, ginger, and nutmeg. Mix until smooth and pour into pie crust. 5) Bake in the preheated oven 15 minutes, Then lower temperature to 350F and bake until center of pie is set and a knife inserted in the center comes out clean, 45 to 60 minutes.

Happy Birthday Miss Emily. You are a beautiful young lady. I love your channel. I celebrated my 75th on the 12th of Sept. My youngest Sister turned 71 on the 13th, and her oldest daughter celebrated on the 15th. Quite a month.
