The character design of that prototype of a SFC FF7 looks a LOT like the male character on that N64 tech demo they did. I remember that that tech demo also had a character that look like Shadow the ninja, maybe they just used some designs they already had laying around for such a preliminar work on a 3D FF...

It's Locke from FF6. The demo you're talking about used Tina/Terra, Locke, and Shadow.

That SNES rendition shot... It kinda' looks like Nibelheim? Specifically the space between houses leading to the Shinra mansion. I mean, as it doesn't look like any other area. Even if its not actually, It looks like it could be or would've become that eventually.

All of these games kinda looked the same around that time. Romancing SaGa 3, Bahamut Lagoon, Rudras’ Treasure, Chrono Trigger, even Live-a-Live. The exceptions were the ones that used pre-rendered sprites like Treasure Hunter G and Super Mario RPG.

I honestly can't blame Square for ditching Nintendo when you consider the fact Nintendo all but screwed over developers with cartridges. For those that don't know back then Nintendo was getting a sizable cut from cartridge sales.
