Knot tieing is one of those things I lack in. I can do a few basics and a lot of fishing knots but that's it.

a bowline, square knot, taught line hitch, half hitch, clove hitch, sheet bend and timber hitch will get you through 99 % of what you need, the rest are variations on these. add the prusik, truckers hitch and figure 8. Learn one a day and practice the others while watching TV or youtube, soon you will have them down.

You only need a handful of different kinds of knots to be able to do many many things focus on the ones that Dave Canterbury Sean Kelly and this man show you there's really only three or four maybe five you'll ever need for most situations

Understanding helps me more than memorizing names. The theory lets me tie anything in reason, in the way it is needed. Been weaving and knotting and manipulating textiles since I was a kid, never even bother to try to learn the names of the knots or stitches. This is good that you added some theory.
