You can actually collect the gold bar twice. The very next mission after the house burns down when you are riding past there on your way to clean out the house for the next camp swing in and pick it up. Then come back again in the epilogue as John and collect it once again.

No, there was Braithwaites to care for her, during and after the Epilogue there's still a couple Braithwaites. Though, they're not guarding the front arch since the main mansion was burnt down, also. If most of you haven't yet done the mission where the mansion comes to an end, (And if you don't mind spoilers.) Above the chimney is a golden shield from the family.

The joke here is the Grays are a literal portrayal of the "No true Scotsman fallacy". The Jacobites were Scots who attempted to rebel against English rule in the mid 18th century . What the letter was saying is that the Gray family is descendant from a Scot who informed on other Scots (the Jacobites) to the English during the revolution. Which, to a proud southern family that fought and lost the "War of Northern Aggression" (the way they probably see things, not an opinion I share) and that self identifies as rebels, it would be deeply shaming to know your family's wealth originates from an ancestor who turned on other rebels and fellow Scots for financial gain.
