Interesting addition to have beer in the stew, was it something you picked up from particular recipe or more like cooks intuition ? Also is there a point to layering the ingredients other than you don't have to mix it after. My family recipe says to roast the pork shoulder bone if it came with the cut, brown the carrots, sweat the onions add liquid and wait.

Not sure where the idea for the beer came from, have used water before but at some stage switched to beer, it just gives more depth to the flavour without tasting like beer. Always layered the stew, just thought it was something that everyone does. Bone in stew sounds like something I might have to try. Thanks for the feedback.
