I've always wanted to make pizza over the fire, and with the current global health crisis, I have been making our breads at home. So I decided to give pizza dough a try. I prepared the dough at home earlier in the day and while getting out to our bush camp, it continued to rise. This recipe is what I use for our breads, it is very simple and the best part? No kneading required!
Pizza Dough Recipe (& you only need half of the dough, save the other half for bread or you can freeze it for up to 3 months!)
3 Cups all-purpose flour
2 tsp instant yeast
2 tsp kosher salt (or table salt works)
1 tbs olive oil
1.5 - 2 cups water.
In a large bowl stir together dry ingredients. Then add the olive oil and begin slowly adding water while stirring with a wooden spoon until well combined. Feel free to add in any other herbs or spices for flavouring (I added in oregano and basil). You want the dough smooth, but not dry. If you've added too much water, just pour it out of the bowl carefully. This is pretty foolproof. The dough should be light and slightly sticky, not dry or heavy. Cover the bowl with plastic wrap (or better yet, some other more eco-friendly wrap) and let it sit at room temperature until it has doubled in size (about 1-2 hours)
Take about half of the dough and place it on a floured work surface and start rolling it out until you get your desired size and shape.
If cooking over coals, don't make the same mistake we made - don't underestimate the extreme heat coals give off! Be patient and don't place your pizza on red coals, it will burn! Hindsight is always 20/20, we learned a lot and we will perfect pizza making over the fire very soon!

There was a flat rock to the left in the pit. Put it in the middle of the fire before you build it. It will act as a heat source and keep it directly off the fire and coals. Like an old fashioned pizza restaurant oven. Cheers. You two are adorable.

While I was impressed with the rolling pin, and enjoyed watching you guys make it, I never use one anymore when making pizza. Instead, I gently stretch & pull the proofed dough by hand into the desired shape and thickness, leaving all those little fermentation gas bubbles intact. This results in a lighter, chewier crust filled with little bubbles & voids. In cooler weather, you can also get optimum flavor from the dough by going for a longer rise time (at least two or three hours, if you can wait that long), handling the dough as little as possible; a slow, long-duration rise results in more complex sourdough-like flavor vibes. Caitlin's dough-wrangling technique at 8:40 was excellent; just do that to shape the whole pie without a rolling pin... Great Video!!!
