Just a few suggestions. First when you mount the knife in bracket use the advanced alignment guide & write down your numbers each time for each knife. This way you can match it next time you go to sharpen it. I keep a journal for all my knives I use the wicked edge on. Example would be put your knife in top def holes with advanced alignment guide. Put knife in vice. Now knife sits with alignment guide numbers top of knife say 4 & tip of knife H. Now you get your angle say 18 degrees. Write in your journal for this knife 18 degrees alignment h-4. Now you have it perfect everytime & will not change that bevel one bit for sharpening. Second looks like your right hand is getting the patens a bit more flat on knife surface then the left hand (I might be guilty of same thing). Finally go get a couple of nylon washers to put over your rods to keep the metal shavings from going inside your balls at the bottom. Great video & how to explain it. I love my wicked edge system & have taken a really cheap $5 survival looking knife & got a beautiful mirror finish on it. I have the older field & sport pro. Progression was 18 degree 100/200/400/600/800/1000/1500 diamond grit. Then 1200/1600 ceramic. Then 6 micron lapping film. finally finished it with leather strops 5/3.5 micron diamond paste. As you will see on their forum a thread I started & here is the link. knife.wickededgeusa.com/forums/topic/customize-your-case/

Thanks John. Been excited to see your thoughts on this sharpener when you posted about a while back. Very thorough explanation once again. Have yet to see anyone else mention changing the angle when you get to the strop.

Not judging, but did you have nail polish on? Once I saw it I couldn't look away. I thought WE recommended down strokes for sharpening, you seemed to be doing the same upwards type you use with the strop. I could be mistaken

No.. i don't wear nail polish.. lol. If you down stroke with the strop, you will ruin it.

John, great videos as usual. I’m curious how this system would cope with something like a boning knife which is very flexible; as it looked like your chefs knife was flexing quite a lot at the tip. Does that not cause it to get rounded off?
@ManCaveMeals6 жыл бұрын
Ben Mulleady it takes a while to get used to not pushing much on the stones and letting the weight of the stone do the work. That chef i sharpened in this video is a rather flimsy $20 blade.

A boning knife presents problems if you like John said push too hard.

There is a post attachment that fits in the base and holds the tip of the knife. That post keeps your knife from flexing.

The basic sharpener without the base is 500 dollars on Amazon. All the rest of these accessories will run maybe another 600. If you need $1100 worth of sharpening tools, then you're the tool.

When stropping the angle changes 2 degrees shallower not wider so 21 changes to 19 not 23.
@Gravattack Жыл бұрын
He did go from 21 to 19
