Smooth sheet & Textured sheet basically provide different levels of adherence when printing. Most plastics will be fine on the smooth sheet (and you can clean it with isopropyl alcohol / acetone), though the Textured sheet has more grip (and also gives a textured finish on the first layer). Only clean the Textured sheet with Windex / Window Clean spray, the plastic coating can be ruined by other chemicals. I use Textured sheet for TPU prints (rubber-like properties, needs extra help sticking)

The textured sheet is slightly thinner than the smooth sheet. You'll need to calibrate them separately. Fortunately, the printer can remember calibrations from multiple sheets, so you do the calibration for each just once, then pick the correct entry when you swap sheets.

Great choice of machine :) You are gonna love it :) Btw. pro tip: NEVER, like never ever, have a roll of fillament where you let go of the end... Its how you end up with tangles in the spool, and suddenly have to restart a multi hour long print :) So always keep hold of the end, or have it attached to the spool. (the prusament rolls you have, got small notches for holding the end) And the sheets, the textured one is great for PETG, ABS, ASA etc. But for PLA use your smooth one :)
