Fuji is the name of a photo film manufacturer from the 90's. They bought advertising on the side of blimps that would fly over outdoor sports events. People started loosely referring to blimps as Fuji's. At the time, many rappers style was " See the beat, hit the beat." RED was just speaking about his ability to mimic all of their styles at the same time. Which is probably a big reason Eminem put Redman at the top of his list.
