The kukko (rooster) name probably comes from the size and shape of the real thing, which is akin to a whole grilled chicken. I'm Finnish but I've never had this. I'm from the capital area on the southern coast and this kukko concept is decidedly Eastern Finnish. You can buy the proper version only in Eastern Finland where they sell this at outdoor food markets. It's quite old-fashioned and not very popular among young people.

I'm not sure if it is an *intentional* double entendre. I visited the Kalakalle homepage and used Google Translate to read the ingredients of their cubed grilled chicken in Swedish (since my Finnish reading skill is useless enough to cause serious misunderstandings), before I discovered that Kalakalle already had made a translation into Swedish, as well as one into English. Their Swedish language ingredients list was weird enough that I didn't recognise it, at a quick glance, as being written in Swedish . The Swedish language ingredients contained "cycklingkött" (bycycling meat, they meant to say "kycklingkött" (chicken meat)) and "rypsölja" (a non-sence word, that I find hilarious (lots of possible wordplay in very rare mainland Swedish dialects), the correct translatation is "rybsolja" (colza seed oil, I guessing that word is used in Fenno-Swedish), or, as we usually call it in mainland Swedish, "rapsolja" (rape seed oil, since we, mainland Swedes, usually lumps all oil extracted from variants of mustards into the moniker "rapsolja" (rape seed oil)). The English language ingredients list contains "rape oil" (rape seed oil). Eitherreally dark sence of humour, or a mistranslation. Either the person that made the translation into Swedish and English, had a really weird sense of humour, or (s)he was just not that good in other languages. I'm guessing the second one. This is not meant as a criticism of the person who made the translation from Finnish into Swedish and English. This translation into Swedish is way better than most translations made by Google Translate, or other translation software. Somewhat unrelated, nobody should ever use Google Translate as anything but a help when reading a language that they already have some knowledge of. Google Translate make really nasty mistranslations, often it translate sentences to the opposite of what they mean ("I love you" become "I hate you"), or the AI translates sentences to something completely unrelated. Google Translate usually produce translations that is grammatically correct, and spelled correctly, but that just make any misuse of the software more dangerous. I prefer bad grammar and spelling in a human made translation, to a machine made mistranslation, with perfect grammar and spelling, that could cause serious misunderstandings.

The name is a bit misleading, even in Finnish, since "kukko" doesn't actually refer to a rooster but derives from "kukkula" or "mound/hill." Since when baked the loaf takes the form of a mound or a hill. It's not a term much in general use these days, but some old dishes use it.

There's also lanttukukko(rutabaga cock) and mustikkakukko(blueberry cock). Lanttukukko is like the other cocks but has rutabaga/turnip instead of fish or ham. Noticed that it said "Svinkött" (lit. "Swine meat") in the Swedish ingrediens list and thought it was a bit odd. Usually we use "Fläsk" (Pork), "Fläskkött" (Pork meat) or "Griskött" (Pig meat) (or "Skinka", lit. "Ham" [or "buttocks"]) for meat of pig, in Sweden. I can't remember that I've seen "Svinkött" used before (which of course doesn't mean that it hasn't been used). Did a Google search and only found 2 or 3 hits on Swedish sites (ignoring Thesaurus sites etc), but a lot of Finnish sites (newspapers, Food administration etc). So I guess it's a "Finland Swedish" thing. Interesting (To me, at least ;D ).. :D I love the Weird Stuff In A Can series! :)

The translation is wrong. Kalapuikko is "fish cock", kalakukko is "fish rooster".

This came at a perfect time. Where I live, we have a market day the first Wednesday of the month (day after tomorrow!), and that's where you can get some freshly made Kalakukko. Not to mention lörtsy, metrilaku and fried vendace :)

Finnish viewer here. We put mustard on everything that is slightly savoury, thus your decision was a good one. Haven't eaten it yet but it seems a good opportunity to test it out one day. Until then, cheers.

never tasted those, nor the traditional one. Its more of a tradition in northern parts of finland. The real old version is made like a beef wellington and insides have whole small fishes like vendace fish and cuts of pork and pork fat and made as a huge loaf. Varusteleka is a fun place for weird foods sometimes, ones in a while they also sell old mre's :)

another excellent video my guy, reminds me of a story my father once told me about a man and his prize winning pig and salmon sandwich. the year was 1856 and the telephone had just been invented but was not yet currently a household staple (however my great great grandfather actually owned the original telephone prototype which they would call the zipper snapper because of the distinctive noise it would make when a call came through, back to the main story however) all in all this video really did tickle my fancy and i've always wanted to try this product, but my muscular dystrophy has always kept me away from salmon (because of the mercury present in the fish even after washing, which plays havok with my eyesight because of an injury i sustained while serving with dwight d. eisenhower on the front lines of marjoram, back to the mercury however i don't believe the government lies about it, how could mercury be in a fish even after washing? something smells fishy ha ha!) thank you for your time and for blessing an old man such as myself with the chance to finally taste this product.
