WOW! Made this tonight! I am 16 and it was my turn to cook. Usually my food does not impress my mom, but this recipe did! She wondered where I got it, and I told her "KZbin of course" Anyway I didnt have fresh garlic, so I used garlic powder and it worked great. Also we did not have fresh lemons so I subed in lemon juice which also worked. I placed the fish over white rice btw. Thanks so much for your recipe!!!

Good recipe,tilapia is a very neutral fish so it takes seasonings well. Viewers notice, you can buy red or white wine with NO alcohol, use same ratio as recipe, and you can drink it, do not buy cooking wine.

Tilapia is SH fish. Farmed Tilapia is fed Pig & other farm animal SH. Use Sole, Cod, Barramundi Trout Salmon or farmed catfish. Tilapia in the wild feed on algae, but on farms they are reared on corn or soybean meal. However, when no other feed is provided, they will eat “poop.” There have been instances where fish farms in Asia were found to be feeding poultry, sheep or hog manure to tilapia.

I kinda think it makes more sense to do the fish and the sauce separately and then add the fish back in to simmer a few minutes before serving. That way the ingredients in the sauce are mixed well and the butter/ lemon doesn't just soak right into the fish. :-)

Clean the fish then wrap it in several layers of newspaper. Put the whole thing in a big bowl of cold water until the paper is soaked. Lift it out, let the excess water run off then put it in a hot oven for about 25 minutes. As you peel off the paper the skin often comes off with the paper. I have cooked whole fish like this for years. Delicious. Try it!

I am no expert, but have heard many professionals say never use cooking wine as it has to much salt. Julia Childs says "If you won't drink it, don't cook with it." I have used chardonnay or pinot grigio to cook with. Hope that helps. :)

I like it over a thin pasta, and then whatever veggie you like on the side. I make the sauce separate though which is then used for the pasta and fish.

wine that is only for cooking is usually not very good quality. better if you use a reasonably priced drinking wine. and yes it's okay for kids, there is no alcohol left after cooking.

yum! i love chicken (and fish?) picatta, but i have something i think u should add to your recipe, MUSTARD! i know it sounds very odd, but a littel dijon can go a long way. It gives the dish more of a "sauce" and it tastes heavenly with the lemon

Always use white wine with fish only. Red white goes with tomato-based sauces best

nothing wrong using red wine, it just makes alot of difference....red wine just dont go well with fish, chicken....this is why people dont drink red wine when eating fish or chicken, they drink white wine cuz the taste of white wine blends well with these meat. Red wine goes with pork, lamb and beef.

You can always take the fish out, then reduce and finish sauce, then add the fish back in.....that way fish won't totally disintegrate into the sauce.....
