I had 15 aquariums until I got married and started a family. Now that I'm retired I'm going to get back into the hobby. I'm getting a few custom tanks built and my main tank is going to be 60"x30"x24" (172 gallon) $1,300 for the tank without a lid and a couple of holes for a sump. I'm getting 4 custom 125 gallon with low iron front glass (losing length to add width) and 4 standard 75 gallon. I don't have any plans yet for fish because I'm going to focus on aqua scaping, filtration and DIY CO2 injection. I'll be spending around $10,000 over the next few years scaping the tanks and a few thousand on stands. Once I'm satisfied with the aqua scaping then I'll decide on fish. All of the aquariums will be community tanks with low stocking. For me, fish have always been considered a bonus to a well designed and natural looking aqua scape. All of my fish choices will be under 3 inches, most under 2 inches. I'll also have shrimp and snails.

One common natural process I noticed in my aquarium is niche partitioning, yes I know people might dislike snails but they are important , and in my tank they have certain jobs according to their species: Malaysian trumpet snails release trapped gasses in the substrate by aerating the substrate making it not stagnant, ramshorn snails clean algae off glass and plants and eat dead parts of plants which helps the plants because otherwise instead of losing all of their leaves they only lose part of their leaves, bladder snails might be in my tank too doing the same as the ramshorns but might have gone locally extinct in my tank due to being outcompeted, assassin snails cull the weak snails and limit the growth of their populations to not make the other species of snails explode in numbers, and for my fish I have kuhli loaches that eat the excess food that falls to the bottom and maybe even scavenge on dead fish and snails, bristlenose pleco that cleans the tank but I have him because I like his looks because he still makes waste as all fish his cleaning is not as essential as that's my job, and for my midwater fish I have cherry barbs and white cloud minnows, but the tank gets warm enough for all species so I don't need a heater.

5/5 food... I once made French fries the old fashioned way but with a carribean twist. It's the 1755 recipe by M. Menon written in the suppers at court way. They're served with Dijon mustard. For my twist I used sweet potatoes instead of potatoes and and rum instead of white wine. Those fries, you don't fry them in oil, it is either in clarified butter or animal fat. First, in bowl you mix flour and butter until well incorporated. Then, in a pot of water, you put the butter flour mixture with a good amount of salt (to your taste). Then you add your potato whole and you let them cook for 15 minutes on high heat. Let them to cool then you peel them in an unusual way by rubbing them with a cloth towel. After that you slice them first down in the middle then you cut them in balanced and equal little batons. Then comes the frying. In the video I saw, the lady used duck fat, me I used clarified butter, so it is up to you. Before frying, the wine batter, It's literally flour and wine. You batter the soon to be fries in the batter then into the hot fat of your choice until golden and you remove them and let them cool to enjoy. Forget new fries, I like the old one better They're so crispy and tasty, I wished I had made more of them. Also tiny tips, add the battered fries in small bashes so the fat stays around the same temperature
