FISHING the HUMPS off Islamorada! Seared TUNA catch and cook!

We head offshore and fish one of the Humps off Islamorada. The humps are underwater sea mountains and can hold lots of fish! We catch blackfin tuna and amberjack on the hump and then head inshore. On the way inshore we catch a couple mahi and then back near the reef we catch and release a red snapper. Back at Bud n' Mary's marina we fillet the tuna up and take a piece back home to cook. We do a lemon pepper seasoning followed by a quick sear in the pan!

I did honey,lemon,ginger in olive oil and little rice vinegar for a marinade with a nice blackfin last week. By far best recipe I've found to marinade and grill tuna.

Great day on the water! Loved the explanation of how to get the red snapper safely released. The lemon-pepper garlic is also a great suggestion. I usually use their hand blended Spicy Tuna Rub or Blackening. Spice and Tea Exchange is our go to as well!

How are the stone crabs supposed to feed themselves if you rip off both claws? Wouldn’t it be smarter just to rip off 1? So they can defend themselves to I don’t know.

Some research showed that when you leave one claw they fight more and usually die, so the wildlife commission made it legal to harvest both claws. the crabs go into full scavenger mode with they are flawless and They use their legs to bring good to their mouths.
