Welcome to another week of the #everybitcountschallenge hosted by Jessica ‪@threerivershomestead‬
This was by far my largest preservation “projects” all done in one week and trying to squish it all into one video!!
We made some room in the freezer and turned a turkey shelf stable. Tomatoes are just pouring in from the garden every day so there’s always something to make and preserve with them. And in between I chose a few lighter projects to balance things out…all this while battling a horrific migraine 🤕

Thank you 💜 I am so sorry for your suffering with these debilitating conditions 😞 The pain from fibromyalgia is crippling and I didn’t think anything could be worse until I got these chronic migraines. Thank you for your prayers and I’m sending the same back to you 🤗

i,m the same, its amazing how we try and ignore pain, plod on, achieve our goals ,then lie down, with some medication and try and ease it off, your turkey/veg soup or broth as us english call it looks soooo delicious xx

Last Fall, I saw packed chicken, cut up baby carrots, cut up onion, and celery, along with homemade broth and my favorite herb to use with chicken, Thyme, salt and pepper. A few weeks later, I caught the "Vid" for the first time, so I put a quart of it into a crockpot, tasted for seasoning, added quite a bit more salt and pepper, to soothe my throat, and after simmering all day, put Amish egg noodles in, for a brothy chicken n noodle mixture, that was so soothing and comforting, it made me happy every time I took a bite. Having the base for many different meals comes in handy on those very busy days. Fast forward to today, August, 2024, my husband just tested positive for covid, for his first time ever, and I have a bad sore throat, but so far, tested negative, but will retest in two days. Knowing we have food in our pantry or freezer, that we can easily put in the oven or crockpot, really helps ease the stress that comes with not feeling well. I'll be trying some of your recipes when I restock. Thank you for sharing your garden and canning ideas with us!

Raw packing meat isn't rebel canning. It's USDA approved (sorry, I'm an American). Because it makes it's own juices as it cooks, it's approved. ;)

I know what you mean about 'those' recipes that always turn up short, and although the ball book is good, so many of the recipes are short. It makes me wonder if they are truly tested. Thank you so much for the video, I love your presentation style, and your honesty.

Awesome, I can water too to fill up the canner. I used to call them dummy jars, now I call them smart jars. Good job, that's a lot of preservation. 👍🏽💖🙏🏽

I always use a chip clip to hold my pages open. It is really aggravating when you have to keep finding your pages.

I get bad migraines and have fibro too. It’s actually a big reason I can homemade food so if I have to rest some days then dinner is already prepared for the family and just needs heated up. I’m so glad I found your channel through this challenge ❤

My goodness, you got so much done feeling so much pain. My eldest sister suffered from migraines also. In her 60s she was diagnosed with diabetes, then on meds now her migraines are gone. Strange I know but true . I hope you feel better

Another great video! It all looks wonderful! You always make canning look so easy! I made strawberry jam the other day and canned it, I didn't have the fresh berries so I cheated and bought the frozen organic ones at Aldi, Shhh...don't tell 😁of course I had to make a loaf of fresh bread to go with it! It's been so hard for me to do all these projects with the pain but you inspire me so much and I'm fighting my way through, thank you for that 💜I never knew chickens would eat turkey, that is fascinating 😄

Soup is looking excellent! You wearing a long sleeve sweater getting me in the mood for winter,now all I need is for our weather to drop from 90’s. What temperature did you roast tomatoes at and for how long. Pizza sauce looks really really good! Really… Hope you feel better soon 👧🏻

Thanks Lyn 💜 The sweater thing only lasted that one night 😂 We were back to scorching temps the next day! I roasted the tomatoes around 400F for about 35-45 minutes depending on their size. If they didn’t char after a while I put the broiler on but the rack was still low. Just keep an eye on them!! My migraine is finally subsiding 🙏🙏..thank you!

Uuggg I feel you,I'm 55 and I have suffered from debilitating migraine headaches for 43 years,I also have Fybromyalgia, RA,OA,PA,RLS,sciatica, depression, severe anxiety, panic attacks, type 2 diabetes, cancer survivor,and more lol.I take 1 day at a time,doing as much canning and preserving as I can,plus we are moving in the next 3 weeks so things are crazy

They were so bad I could hardly see…and focus… so I understand your pain….. I have now found a meditation that is helping with the help from one of my neurologist… it’s a monthly shot…. I still get migraines they are just not as bad as…… I wish you healing ❤️‍🩹 for your migraines…. God bless

Good morning! You are amazing! I'm so sorry about your migraines as well as fibro. No one would know if you had not mentioned it. Praying for all the painful things to leave your body quickly. In spite of everything you push though and get so much done. You are quite a little dynamo even with your health issues. I have not canned turkey, but normally freeze the leftovers to make turkey pot pies, etc. We have family here to help us eat it, so there is not always a lot leftover. And that's great because you know it was enjoyed. 😊 I do can chicken, but maybe this year I will try canning turkey too. I'm going to plan on buying an extra one just for this reason. I save up all the various tomatoes that start looking sad and freeze them. When I get a big bag full, I cut them into smaller pieces and dehydrate with the skins and seeds. Once they are dry, I allow them to cool a bit and then use my Vitamix to grind them into powder. I have never added salt or seasoning to any of it as of yet, but I plan to for my next batch. Some things always stick when I dehydrate, so I started lining the racks with parchment paper. It works great! I just cut it to the size of my racks and I can even reuse them depending on what I dehydrated the first time. ☺ 💙💜💙Thank you for being such an inspiration to everyone who has health issues to keep going. Thank you Carolyn 💜 I always appreciate your prayers and heartfelt wishes of support! That’s a great idea with using the whole tomato. I never think to dehydrate larger items..but I also have a very small dehydrator. Seasoning them sounds delicious and there are so many options too. Maybe I’ll try it with some cherry tomatoes 😀 Have a wonderful day 🙏

@@JustTheTwoOfUsHomestead I have a Cosori dehydrator with six racks. I actually got it before I got my Nesco pressure canner. It took me a long time to be brave enough to start canning. LOL! I finally got an Instant Pot about a month ago and learning new things every day. I hope you are feeling better this afternoon. 💜

I usually do something along those lines but I kind of did things backwards this time. Normally when I make turkey soup it’s with the leftover cooked turkey.

I have done canning recipes that did not produce as much as they say they will. I will make myself notes on the recipe page about it, so I will remember next time. I don’t know why they turn out that way, other than just plain ole human error.

You have 8 pints of sauce there, exactly what a double recipe should yield. Perhaps you were expecting quarts not pints? It looks yummy.

I make turkey soup I put 2tbsp of Rae pasta at the bottom of my jar fill with soup and pressure can, never had.a.problem.

@gwencobb1452 - doesn't the pasta come out overcooked /gummy? I've given up putting pasta in any of my soups because it's always overcooked. I just cook it separately & put some in each bowl as I serve it. This is with freshly made soups as well as my canned soups. I'm really curious about its texture after being canned.
