This is a really impressive restaurant that can serve raw beef. I tried beef tartare in Brussels... and it is so different. I love how much effort they put into this, to kill the bacterias and then use a good marinade. This is what I call a real chef.

Nice to see you're in Sendai, and OMG you tried the raw shark heart too, I tried it in Kesennuma, same prefecture as Sendai but by the coast, one of the towns worst affected by the earthquake and tsunami in 2011. I was there just one year after that in 2012. The texture was special yeah but tasted good. Horse meat sashimi, so called basashi is amazing! More famous in Kyushu though, as you mentioned, especially in Kumamoto prefecture, but delicious anywhere. One of the best sashimi there is in my opinion, haha. I tried raw chicken too and no problem, anyway it's Japan so you don't really need to worry about it, it's carefully prepared and all. And it's, yeah, surprisingly good. But hey, you need to try beef tongue (gyu-tan) in Sendai, it's famous for it and delicious! Oh and love the dessert called "zunda mochi". By the way the Tohoku region is so underrated and it makes me sad, there is so much to explore there and it's quite off the beaten path, not many tourists go there, but it really is a region of Japan that should get more attention than it does. So really nice to see you there! Would love if you went out to the coast to support some of the towns that suffered in the 2011 disaster directly, and there is some great food there too (of course). Last, it's "doki-doki", not "toki-toki", haha!

If the meat is fresh, bacteria isn't nearly as much of a concern. It isn't explicitly stated in the video, but they did show a live chicken before. I bet the chickens are slaughtered and butchered on site. That means the meat hasn't been sitting around compared to if it were shipped pre-butchered to the restaurant. In many Asian countries actually I think it's standard to buy your chickens live and have them butchered for you. In Southern India I know for a fact it's the only way to get chicken, cuz that tropical climate will make stuff spoil in a hurry, combined with 3rd world living conditions.

That was one incident that got huge publicity in Japan and yeah it was probably not prepared as it should, I think it was probably the same restaurant as well? Or same provider at least. So it was more of a one-time thing than something happening a lot. And yeah blowfish cases are always people who have attempted to do it by themselves without the proper training and knowledge to do it, in a restaurant it's perfectly safe.

In germany we have a very common dish for lunch called Mett. It's raw and is made out of pork and beef. So I am not afraid of raw meat. I would totally try the beef sushi and tartar. But I am not so shure with raw chicken. I can also imagine that it's quite chewy.

Agreed... the difference b/w raw chicken and raw beef is that bacteria in chicken can exist IN the muscle tissue, while with beef the bacteria is only on the outside. That's why you can have a rare steak, but NOT a rare chicken breast. Cook that shit to 165F!
