I've been buying frozen Korean persimmons from a local specialty grocery store and have found their taste to be really captivating. Not exactly sure which variety it is, but when you defrost it, it really has a sweet taste and is soft and easy to bite into. I'm hooked on the taste, so maybe I'll plant a persimmon tree!

He must not know about the kind that we have in Indiana, where Winters are harsh. Impossible to eat until they're ripe, and then they're impossibly gooey and messy to work with to extract the pulp. But a delicacy and so traditional that at least one Indiana town has an annual persimmon festival.

Yes, I have picked American Persimmons. They are much smaller and very astringent unless optimally ripe. They can be considered more "wild" than hybridized like the asian varieties.

Diospyros virginiana, the american persimmon can be grown in fairly cold climates (usda zones 4 - 9) with lots of snow and freezing temperatures for several months in winter. Many different varieties, colors and shapes of fruits are available in nurseries.

Excellent. Yes, I am one that loves the Amagaki. I live in WA, but go to California also. I am having a hard time finding anyone who can obtain the Amagaki. There was a store here, that carried it, but no more. I have not seen one in 20 years. They are much larger than others, and are more golden, with an occasional blueish blush. Flavor is so good. Can't find it online, either

John i bought some persimmons yesterday and they lookes gorgeous from the outside and ripe but when the flesh had black spots all over.. I am not sure was that a bad persimmon or just overriped? Quick question on the second one (chocolate persimmon) that you mentioned not to mixed up with the black sapote, do you have the name of that small second persimmon? What i've got at my local store are Rojo Brillante Persimmons (from Spain). Apparently they are Astrengent, but... i don't want to take the risk. After doing a bit of reading, they are definitely astringent, but they treat them with CO2 for 24h at 20 deg.Celcius prior storage to remove astringency. But i've also read a study saying that at storage of 15 deg. celcius, the longer it's in storage, the less effective was the treatment. So i don't know exactly what to think afterall. I might try to put them in the freezer just like suggested

In order that the persimmon is more likely to ripen, you just need to put the persimmon fruit in a bag of apples for about 5-7 days and the fruits are ready.

@@lauren9714 I know this is an old post, but if you want to grow persimmons in a climate that has cold snowy winters, look for "Diospyros Virginiana" (American Persimmon) online. I think Oikostreecrops.com sells this variety. They also have a KZbin channel "Oikostreecrops" where they have videos all about them.

That's the native persimmon--it's very small and astringent. Delicious, but takes time to peel the little buggers. The trees are used as rootstock for the Japanese persimmons though, so that they will be hardier and grow well, I have 5 Japanese persimmons growing well in Raleigh NC.

Finally, persimmons demystified! Thank you! I was experimenting but was having trouble with the astringency. I got a couple that were so astringent that my tongue got fuzzy and I could hardly feel anything in my mouth :-) I didn't know what was going on. Then I learned there were two different kinds but I was waiting for the wrong kind to get really soft and it never did. Now I think I've got it! Sounds like if I hustle out tomorrow I'll still be able to find some before the season ends.

Hey -- At the store here they have persimmons sometimes -- I love them -- but they have a ton of diff. varieties...My fave is the Hachiya but you do have to wait until they are like jello-like mushy...The fuyu's are also great though. But they have this one kind, that I absolutely hate -- it's called "Kaki" and has a sticker on it that says "Persuasion" on it (spelled differently). These are so bad -- but I have a feeling I'm not waiting until it's ripe enough or something...But I've had two of them here for about a month and they don't appear to have changed much since I brought them home from the store. Are you familiar with the Spanish variety? I think they are also called "Vanilla Persimmons" but that might be yet another different variety...

Evolution. In one region, there were lots of fruit eating birds that did not like astringency, so astringent fruits dominated. In another region, the grow season was short, so small fruits predominated. And so on.
