Actually, the Color layer mode for Photoshop is more accurate than the Saturation adjustment layer in terms of grayscale, because it takes into account the properties of chroma (how intense colours are at certain values). You can test this with a highly saturated yellow against a highly saturated red. Under the Color layer mode, the grayscale displays properly, with yellow being brighter than red, but under Saturation, both look the same.

problem is that with the flower example, the changes you made, completely transformed the mood and atmosphere. this is not necessarily a bad thing, but it could be when dealing with certain artworks.
