A tip to make your cutting board look awesome. Oil the cutting board for once a day for a week or 2 using a food grade oil (Grape seed, Vegetable, Canola or olive). At first, I put a ton of oil on and let it sit over night to sink in. Then once it stops drinking oil, oil it once a week for a month. Also flip it and make sure both sides get oiled. Then once a month. once it is saturated with oil, it will be with you for a lifetime and look amazing!. My board is a decade old and I only need to oil it every once in a while and I live in the desert of AZ. After that, just oil when they look dry

I have a prime aged tri-tip in the kitchen right now for dinner. I may have to ramp up the smoke a little on this cook. Looks awesome. I do still prefer to stop the cook at about 125F and let it rest. You get that 140F after the rest. I don't find it tough or chewy at all. This is California where tri-tip is king and you don't want to over cook it. Great video my friend.

You said this is not your usual Chimichurri sauce, but I went to one of your offset smoker courses and you did an amazing Chimichirri sauce for a tomahawk steak. What is your usual recipe because it was amazing!

Oh it’s pretty much exactly the same in terms of recipe, however, i usually chopped it all super super fine by hand with a knife rather than blend it!

I might pop a Hixson tri-tip out of the freezer now and have a crack at this on Friday.... looks like it tastes incredible DW. Will be cooking on the Kamado Joe, i've not tried a wood only cook on there.... will have to adjust a bit as there's less room and open air vs the Chudbox

I'm sure it taste good but 140f is bordering on too high for a tri, you're losing alot of that interval moisture and wall to wall pink, but maybe y'all like it differently over there
