Yes I was shocked to see Dr Joel Fuhrman do a podcast with this guy in which he dodged all the foods that he recommends and which Gundry says will wreck your body! Seemed like wanting to profit off each other's relevance Fuhrmans ANDI (aggregate nutrient density index) chart is the kind of document Gundry would likely want to have consigned to a bonfire Hope Dr Greger covers more assertions by Gundry as the guy is getting lots of play right now and lots of nuts, berries, beans and fruits are painted as toxic by the guy

The fresh beans, the ones that you just picked off the plant which are not yet dry are very soft and you can eat them raw without breaking your teeth. They have a milky taste. I do not know if those have Lectins though. More research is still needed on this topic. There is a lot of good food out there that we are too afraid to eat.

Dr. Gregor. We eat a lot of raw tomatoes. Any issue with eating these with their lectin content? Also, pressure cooking red beans for 30 minutes to deactivate lectins would reduce them to mush. Is that really how long they need to be pressure cooked?
@rosie9205

Depends on the volume being pressure cooked and at what pressure level. If it's a kilo that's quite a while The references in here seem ancient and to refer to very old school pressure cookers at low pressure. Nobody would do beans for an hour in a modern one as you are kind of referring to here.

Any legume is better first soaked and then cooked. So soak beans overnight, or boil them for an hour and let them soak for some hours in the hot water, I usually, when soaking, add soda bicarbonate and salt to ease the inhibitory enzimes and discard as much with the soaking water. I soak chickpeas, lentils, beans, any legume, before cooking. Always soak them

Not all lectins are toxic. Tomatoes and many good foods have lectins wich are harmless. So being avoiding lectins will not be beneficial. Kidney beans have lectins that are toxic and have to be cocked. You can buy canned kidney beans (check if they are completely cooked or not) Soak dry kidney beans and boil them for short time. Don't soak and boil dry beans for a long time. For me I buy canned and cook them to improve protein digestibility.

That's fine. Soaking removes some lectins, but high temperature cooking is what really deactivates them. Soaking first cuts down on the cooking time, but if you're using an instant pot it doesn't make that big of a difference. For example, soaked beans only take 12-15 min in Instant Pot.

Why high-protein diets are really high-fat diets? They are based on meats and other animal "protein sources", which contribute more calories from fat than protein in the daily caloric intake. And, since most people can't base their diet on beans - they are funneled into the standard, high fat diet with by those "high protein" diets.

"can't"? I think you mean "won't"
@Apollo440
@Apollo440 2 жыл бұрын
@@natmccallum8885 Maybe "aren't able" would be a more proper word choice. The lectin myth is a drop in the ocean in my opinion, but still can hold some people off. The other big thing is flatulence after consuming beans, which is a hit on the social aspect of peoples lives. Plus, most „good” (popular, well covered) bean recipes use fat as part of the sauce or cooking method. As an effect, those who want to do „high protein” not only end up doing what’s bad for them, they also end up doing what they did not intend to do, and that is high fat.
