Could you use 2 layers cut away stabilizer or maybe decovil

I don’t think that would work well as the markers get onto the sides and back when kids are using them.

Excellent, I'm sure you will do great ! The scissors with the serrated edge are "Olfa 9766 SCS-2 Stainless Steel Serrated Edge 7-Inch Scissors" that I got on amazon. The "Kai 7205 8 Inch Professional Shears" are my favorite tho.

Do you have to use clear vinyl if you are using marine vinyl

I would, I find it easier to wipe off. Some people just use vinyl but I’m not sure how they erase all the ink.
