Food savor has containers for marinating. On marinate setting, it will remove the air from container, then release, then vacuum air back out each cycle. The containers are acrylic/plastic but since I only use it for cold items I find that it’s okay. There are some glass/vinyl options by other brands on Amazon.

For the vacuum sealer, I carefully watch the bag as it is removing air and quickly press seal before the liquid goes past the sealing point. This way none of the liquid gets to the tray. It also helps to have the bag hanging or sitting lower than the bag entry point.

The trick you’re looking for is to do it on the edge of a table. Let the bag with the juice hanging down. Gravity will battle the sucking and it’ll make it easier to close the back. The other trick is using a paper towel to slow the marinate long enough to be able seal
