Flavor On a Budget: Cabbage Two Ways (Also a Vegan Fried Chicken Sandwich Dupe)

Ingredients
Cabbage Hot Pot
1 Nappa Cabbage
8oz Sliced Lamb (or Oyster Mushrooms)
4 Qt Superior Stock ( • Instant Pot Superior S... )
4 oz Chestnut Mushrooms
Directions
Cut the root end off the Cabbage
In a large pot layer the leaves all around the lining of the pot and work your way in in a spiral
Insert the lamb in between the leaves throughout
Do the same with the mushrooms
Top with the stock
Simmer for 45 minutes covered
Serve
Cabbage Stir Fry
1/2 Head of green or red cabbage
2 tbsp szechuan peppercorns
2 tbsp garlic
1 tbsp minced ginger
1/4 cup Chinese Cooking Wine
2 tsp doubanjiang or 2 tbsp gochujang
Salt
Oyster Mushroom Cutlet: Sorry, it's gonna be in the book so I can't write it down yet 😭

For anyone who's frantically looking at the grocery store, just grab the green cabbage. I couldn't find a napa cabbage so I did it with a Common green Cabbage and it turned out amazing.

2:55 That's pretty much how I tell the difference between Korean and other writing too. If it has circles it's most likely Korean lol. And a friend of mine tells me he can tell the difference between japanese and chinese is that chinese has more lines usually in their characters compared to japanese. Great vid! Always happy whenever your longer vids show up on my feed.

You can also tell the difference between Japanese and Chinese because Chinese is all complicated characters versus Japanese which is complicated characters plus a mix of straight and round characters (katakana and hiragana). What's funny is that Japanese actually uses many of the more archaic form of those complicated characters (even though it's been drastically simplified from what it started as) and is considered very old fashioned compared to modern Chinese characters. Japanese and Taiwanese Chinese, actually.

Cabbage and gochujang is basically the base for the stir fry I make every day for lunch and it's outstanding. Hit it in with some fish sauce to cut the sweetness.

Our little dog also loves vegetables, haha. He will sit and beg hopefully any time we're trimming brussels sprouts, but he gets outright mad if carrots are involved and he doesn't get any.

I always say our Dexter is a Vegetarian. As soon as he hears me getting the cutting board out or hears the knife drawer open, he's at my feet. Loves his veggies. 🐕‍🦺🦮🐕

Im German, so I’m lucky to know many ways to enjoy cabbage. The ones I especially love is „Krautwickel“ which roughly translates to „cabbagerolls“. These are basically big cabbage leaves filled with chopped onions, garlic, spices and lots of ground meat. Then there is „krautsalat“ which is cooked and chopped cabbage with dressing and mustard seeds

I remember seeing someone make the same stew but use a shorter pot and slice the cabbage to about 2-3 thick pieces. Then, they would layer out each piece of cabbage and a piece of shabushabu meat on top. Then, they would slowly delicately place it all around the pot and make a beautiful "rose". Lol Oh, I think they used satay or something sauce instead of superior stock as flavouring.

Would you be willing to do a breakdown on soy sauces? Like common brands you might find and what type they are? Many recipes and guides I have found just specify light vs dark, etc. But the actual soy sauce brands you buy don't often say. Like is plain old kikkoman a light or dark soy sauce? If a recipe calls for "dark chinese" what brands/types are good for that? Where does tamari fall? The whole thing seems somewhat opaque even with some research.

Written Japanese does make use of some circle shapes, although not as much as Korean. In fact, the word panko written in Japanese (パン粉) has a circle in it, so your tip might not help someone truly unfamiliar with both languages. But the mushrooms do look delicious!

I don't speak or even read a single word of either language but if you put Korean and Japanese writing in front of me I can instantly tell which is which. I can't say the same for Chinese and Japanese though since they have the same alphabet or whatever Japan took from Chinese language

Could you speak in a future video about your background/training? These recipes seem to effortless for you to conjure before us in the videos but there’s obviously a lot of experience behind you being able to make these dishes. All three looked great; I am anxious to try all three.

John, almost all indian language I know have circles in it's writing.... but i get your point. and also most Indian product packaging is in English so most people won't mix it up with Korean products

I’ll probably skip the lamb meat and some of the harder to get spices since everything is getting pretty expensive down here in Brazil and I am fairly poor. But I love me some cheap and healthy cabbage recipes, they pair well with the old feijão com arroz, mistura, keeps things from getting to samey. Wish you the best.

I've heard Sambal Oelek is an accurate sub for Doubanjiang so that's what I've been using but idk the store was out of the stuff each time I tried to get it there so it's all I got

all of these look so yummy and the cabbage hotpot looks so easy!!! would you suggest shitake mushrooms as an alternative to the chestnut mushrooms if you cant get those? also just thinking what would you add if you cant add the mushrooms - my mum loves cabbage so would love to suggest this to her but she is allergic to muchrooms. :(

A) These look awfully tasty, and relatively simple, which is always a thing in my book. Also, I’ve got a head of cabbage sitting in my fridge, looking for a destiny. B) I don’t suppose you have any video of the moment you realized that your boyfriend had mistaken a head of cabbage for a head of lettuce? There’s something that I find delightful about realizing that someone you love and respect has just done something that, at least in your world, is clearly boneheaded. For me, at least, despite the inconvenience, it always makes that person seem even more lovable.

What would you suggest to replace the Superior Stock in the Napa hot pot? The dried shiitake at the bottom and oyster mushrooms between the leaves will def flavor the liquid but it seems like it needs a lot more of a salty/umami component.
