I have smoked several turkeys, with your homemade brine and stuff with the apple, celery,onion and orange and they are delicious. This recipe is from several years ago.

It varies on temperature. If you want crispier skin you tend to want to smoke at least at 275 degrees no more than 300, until the center breast measures 160 degrees,(it will carry over to 165 when resting). If you spatchcock the bird it will cook probably 30 minutes faster too. I'm guessing it will take at a minimum 3 hours at these settings
