2 kg pork neck (70 oz)
Marinade:
8 tbsp soy sauce
2 tbsp honey
2 teaspoons sweet paprika
2 teaspoons black pepper
2 tsp mustard
thyme
Salad:
Chinese cabbage
radicchio
chili flakes
lemon juice
1 tbsp olive oil
1 tbsp raw sugar
Salt
Sauce:
125 g mayonnaise (½ cup)
1 tbsp chilli paste
Tortillas
Bake: 180°C / 356°F 90 minutes on top/bottom heat

I’ve given it a thumbs up only because of the extensive work you have put into it. However, “attempting” to make pork NECK an acceptable editable reminds me all too much of when I was a youngster on the farm in the 1950’s. Being faced with the challenge of finding beef tongue an acceptable entree for dinner still, to this day, makes me shiver!. There were 8 of us and my wonderful parents did their best to keep us all fed. Last night I had a $16.00 filet mignon at home for dinner and I prayed that my, deceased, parents were not watching!!! Georgia, USA. I have never even seen pork neck for sale here.

Checking for comparable cuts, Butcher said "Pork Shoulder Roast or Boston Butt". Checking my Supermarket the price for either is currently $3.00 per US pound (I believe about 2.2 kilos} These cuts of pork are very popular in the US BBQ Community, to smoke and shred for Pulled Pork Sandwiches. My favorite when served with a cabbage slaw. There are great similarities' between the ingredients you used and what I would use to prepare Pulled Pork. Thank you for your posts, I always enjoy them.
