Hi Fleur. Just a suggestion: If you sprinkle a little parmesan cheese in the ramekins and swirl it around, coating the butter, the soufflés will have something to cling to and climb higher. If you make a sweet soufflé, say chocolate, do the same thing but with sugar. :-)
