Hi as a pumpkin lover myself I know a easy way to remove the skin, put the pumpkin in the microwave for about 2 minutes it softens the skin and makes it easy to peel. Love your recipes.

when i was at uni we often made what we called vegetable mush (tastes better than it sounds) basically chopped tomatoes, kidney beans, onion, garlic and then whatever vege you want, courgettes, carrots, peas, mushrooms, squash etc all in a pan teaspoon of sugar (balances out tomato) and either have it with pasta or rice. really cheap and pretty healthy. try to find a local fruit and vege shop/green grocer because it will be even cheaper. soups like leek and potato or butternut squash, chilli and bolognese are other good ones, use quorn mince to make it less expensive and the bonus is that you can make a massive batch and freeze it.

Always put fresh chillies!! I put about 10-12 of the small (rocket) type chillies for lots of heat, and eat it with yoghurt so I don't catch fire :) My Indian husband likes it straight up spicy like that!

Tried chopping the squash the way Mike did it and it was pretty tough... but using a potato peeler actually worked! Required a bit more elbow grease than peeling a potato, but it got the job done pretty fast :)

Best way around the squash is to use the potato peeler to peel the whole squash and then chop.

You should try making butternut squash and sweet potato soup, it's really good, especially if you add coconut milk/cream to it (depends on how creamy you like it).

If you microwave the squash for 5 minutes before cutting (pierce first) it should be easier to cut.

ellie dee its kind of hard to describe lol but its basically bread made with corn meal, it can be sweetened with sugar or made savory, you usually put butter on it and eat it with soups, etc. Like dinner rolls :-)

i don't ever use salt in my recipes and my food tastes great, pepper is key though in my opinion! salt was originally used as a preservative not as seasoning so i don't think it's necessary in my opinion :)
