I'm in the UK and we don't have cheese curds here, any tips on other cheeses that will work well? These look AMAZING 😋

Definitely! Cheese curds are chewy when cold, and melty when warm - so any firm cheese that melts a little in the oven would be a good sub. Cheddar, Jack, or even a processed (not fresh) mozzarella cheese. But just about any cheese would be delicious in these! The main goal will be to break it up into bite size pieces like you see me do in the video - cheese curds already come in sort of bite size pieces, but they are random in shape and size - so just break up the cheese into pieces instead of grating it! 🧀

For easier breaking, freeze a block of cheese. Refrigerate overnight to defrost. It will then break easily.

Cheese curds are a specialty cheese product where the cheese is formed into bite size pieces - they are chewy when cold, and melty when heated. Check out my pinned comment on this video for substitutions in case you can't find curds! You can definitely use buttermilk instead of cream, or even yogurt - both would still produce a lovely scone!

UPDATE: Just made the scones today and they turned out AMAZINGLY Tender!! Perfect!! It took me longer to clean up and bake than to make. My family loved them so much they now are thinking up what other flavors to make. First up is Blueberry!. (thinking to use dehydrated blueberries not fresh to keep the dough from getting too wet.). Game Changer indeed. Our NEW GO TO recipe for all scone/biscuit recipes!!

Thank you for the recipe. I have always hated scones as most people who made them used baking soda, which I am over sensitive to. Being able to customize by adding some chives or finely dice ham/sausage crumble really opens the possibilities.

You must not live anywhere near Tillamook - they make some of my fave curds in the country! 🫶 You can sub in crumbled cheese - something like cheddar, jack, or even low moisture brick cheese - break it into bite size crumbles before adding! 💛

I live in Oregon and I find them in a lot of the grocery stores here. They don't always put them in with the regular cheese so sometimes you got to hunt for them. Oregon's 4:44 very own Tillamook cheese factory is very famous for their amazing cards.

QUESTION for ERIN: If I want to make Blueberry Scones with this recipe, should I make with Real Blueberries or Dehydrated? Do I rehydrate the berries in hot water before adding to dough? Do I need to add more milk or butter to help hydrate the dough if using dehydrated? I know the real blueberries may make the dough too wet during baking. HELP, Please!! I couldn't find a blueberry scone recipe only your lemon blueberry muffins. THANKS!!🤦♀🤦♀

It's totally fine to use with fresh or dried fruit to make scones! Fresh fruit can make for a more moist scone, but they sort of turn jammy in the oven - like little fruity pockets throughout! Cheese curds are firm when chilled, and get melty/gooey when warm (they are often breaded and fried as a snack in places where they are super common, like Wisconsin). They are best when they are fresh - and when they are super fresh, they actually make a squeaking sound when you eat them! Typically, cheese curds are mild in flavor - much like any of the varieties you might find in the store as a "cheese stick" - and they'll often be flavored because they are bite size and eaten as snacks! Sometimes, you'll see flavors like garlic, jalapeno, etc. - the flavor of the cheese is usually mild enough it goes with a lot of other flavors!

Yum! Chocolate chip scones were one of my favorites growing up - my mom always made them for me!
