I thought this ending was beautiful and bittersweet, especially since Shirou could not see Saber again until he lives out his mortal life. I don't know if he ever becomes Archer since destroying the holy grail altered the timeline.

I know I'm 9 years late, but I feel the need to inform you that Nasu confirmed that none of the 3 Shirou's from the 3 routes will ever become Archer as they are. They have the potential to, but if they stay on their paths, they will not.

In the aftermath of Fate Route, He follow a path similar to Archer except refusing contract with the miracle of the world (Alaya/Counter Guardian). He live his life doing what he does best as Emiya Shirou, and ally of justice that helping people but with less burden guilt and more insightful for other, something he learned and honored from Saber and vice versa.

Sad ending but in the manga , they meet up again in the Garden of Avalon, after shirou lives his life... they end up together in the end, but it takes a life time to do so

Each of these series are based on a different route of the original visual novel. This anime is based on Fate, which is Saber's route, while Unlimited Blade Works is Rin's route. Both are equally canon endings.

There are Three Canon Endings... And then There's Hollow Ataraxia where the Timelines got Fucked up and Merged. In Hollow Ataraxia, it is implied that Saber has in fact won though... Shirou has a Porn stash filled with Blonde Girls.
