Nice tutorial. Personally I rather keep all my maps separate. I find doing it this way is the least destructive. Less confusing too as you're always dealing with one channel layer.

Use Just 1-2 Materials For You Models Or Just 1 Material If You Have Many UVs Then Use 1 Material With UDIMs
