Nancy Silverton’s “Breads from the La Brea Bakery” was my first bread bible. She takes you through all the techniques for artisan breads. I learned the value of the overnight chilled rest for developing flavor, that steam is essential for keeping the dough soft during the 1st half of baking, allowing for maximum oven spring, then the crust develops during the final half of the baking. I’ve learned to feed my starter with unbleached white flour - set some aside for the future - then feed with whole grain flour, which makes it much more active. Wonderful video!

This was a wonderful explanation and demonstration on how to actually create a starter using natural yeast! I'm even happier that she used grapes as her primary source of yeast since my family has had vineyards here in California since 1917. Now I know another way to put the grapes to use! Thanks for teaching us your methods Nancy Silverton. Thanks to the late great Julia Child for her never-ending passion, enthusiasm and trailblazing spirit which continues to inspire others, and thanks to those who continue to share her stories (and theirs too) with the world. ❤️
