Visiting Rùn, a Cantonese restaurant (2 Stars Michelin) in Hong Kong to have a Dim Sum platter, apart from that Executive Chef Hung Chi-Kwong prepares a double-boiled abalone soup, wok-fried crab claw and fried rice:
0:21 Dim Sum platter: Deep-fried diced Wagyu beef puff, black pepper (錦繡球黑椒和牛酥), deep-fried glutinous dumpling, spicy sauce, Nyonya (娘惹香辣咸水角), steamed cod fish dumpling, salted fish, water chestnut (四喜鱈魚粿), deep-fried mantis shrimp, salted egg yolk (黃金富貴蝦)

@@Davyjones5454 Because sea urchin taste turns no good if overheat. The chef use a thicker cast iron pan & gentle fire to keep the heat not too strong.

let's appreciate how incredibly difficult that last fried rice dish is to make. All those ingredients have a high moisture content and different cooking temperature and rate. That, and coupled with the skill required to make fried rice would make that one of the most technically demanding dish to make. Absolute masterclass in Cantonese-styled cooking.

A....mazing, the precision and delicacy with which the chef cooked and constructed the meal was incredible. I have been fortunate to have similar experiences in the past and every little adjustment to each dish separates this experience from your everyday resataunt dramatically. (I noticed some comments suggesting he doesnt pay but in many cases the youtubers do because of how successful they are.....hence the quality of their videos)

he looks like he's using metal utensil on a non-stick pan, i think it's teflon. if my suspicion is true, then don't eat there.

Your hands become quite durable after working as a cook for a long time. I spent 10 years working as a line cook and my hands turned into leather gloves. It's been quite a few years since I worked that job, and I still have no feeling in my fingertips.

.....the portions/quantity leaves a lot to be desired particularly if you’re paying that much. There was still some rice left over. Should’ve put all of it in the serving bowl.

you can buy something similar online but what they use are custom made you can see the inner wall when they lift the wok it looks different in every kitchen

No disrespect here, just an observation, i.e. The last few cooking methods use a tremendous amount of oil and water which makes me wonder if any of it is recycled. I don't care one way or another, just observing and curious.

if you look closely they have 2 buckets of oil one is frying oil which they do recycle and the other is fresh oil for the main cooking and for the water they have a bucket with an open tap

The camera has problems with auto focus, it's jarring and makes viewing for me little stressful. You should get a camera with better auto focus, also maybe shoot a little wider if its has focus problems.

Shit. So expensive. Soup with abalone in coconut. Crab crawl with veg, fried rice. About Singapore 250 for a person. I can eat much better crab, fried rice and soup under SGD 50 for a person.

I guess if someone doesn't have something nice to say, as the old saying goes, they should say nothing at all. But it is 2022 and this is the internet, so I am going to say that I don't "feel it" when it comes to these expensive lunches and so forth recently in these restaurants. I suppose if you are sitting there in the beautiful surroundings at the table it helps carry the illusion, but IMHO the food is disappointing for the money. I actually feel that way about a lot of "haute" cuisine, which I start to think is a big vanity rip-off relatively easily - and i know they do small volume and have to charge more - but I just don't feel the romance here. Anything cooked in a big wok, to me, has to be plentiful, delicious and reasonably priced.

you can't taste the food through a video but video's with commentary does help especially from local youtubers i've been following few hong kong foodies they make non biased video's there are difference between cheap wok food and expensive ones

@@drichinlord2953 It may be one of those transitory impressions on my part. I respect other people's opinions on the subject. I don't doubt the skill of the chefs. At other times I would have probably enjoyed this more. KZbin comments can't always convey the complexities of why people feel the way they do. I certainly don't want them to go out of business.
