It’s so funny watching you cook because it’s so similar to how I cook. I like to call it ‘how can I add as many veggies to this as possible to make a decent well rounded nutritious meal for all these damn children I have without adding any allergens’

Made those cabbage pancakes i saw on your channel a while back because a cabbage was ready in garden and so good. Never heard of it before and it really is my new favorite. Thanks for the inspiration!

We love them! And cabbage lasts so well in the fridge it makes eating a ‘fresh veg’ dish later in the month feel quite decadent!

Lyssa I have been wanting to make our own sausages Moroccan for a while you have given me the incentive to do so as well as spinach and fetta we have the machine it was just my being nervous and not knowing where to get sausage casings thank you

It feels so daunting, but it really is worthwhile! the flavours you can add to them make them feel less like a budget meal, whilst still being a fairly inexpensive meal! I think I love that the most about the food I make, even though we spend fairly low, we eat fairly gourmet, only my time is required, and I know not everyone has the time, but I am lucky to!

The kitchen is in a bit of flux atm :S. We're hoping to build an extension onto it, so at the moment its not very water proof and the roofing is those temporary gazebo things with cafe blinds over the top lol! As I get the extra part built I will be sure to bring everyone along on our figuring out the best way to set it up!

I really like to make lots of differing things, I know we could just eat similar every day and probably be quite fine, but I get bored with food and when that happens I tend to just not bother eating lol.

It's such a great thing to have in the freezer and just add a dollop to anything and everything. If you google Thermomix stock paste, there's a wide variety of versions of it, chicken, beef, vegetable, some with tomato, some without etc! :D

Wow that beef was such a great find! Your so lucky! We are having a lots of crap going wrong time at the moment.... again! It must be contagious! Have discovered we have a Quall killing our chickens all of a sudden! Have lost over a dozen chickens and one guinea fowl. So upsetting!

Oh no! We have been lucky, since the first time a wild dog got into our chickens and ducks in our very first coop, we have had a goanna occasionally and a snake occasionally but nothing that has killed en masse, we do a lot of pre emptive work to the pens now to try and make sure they’re secure.

Yeah, I only use the pearl barley when I make soup. Nice cook ups there. That Costco beef....a big tick.

I just love the nuttiness and texture of the pearl barley, but if we can replace it, then that's great and the kids seem to be tolerating the change in texture, there was some whinging... but they got over it hehe.

Welcome! and thank you :D I have never had any formal training, I have worked in some kitchens over the years, cafes, pubs, sports canteens, KFC that kind of thing, but no formalised training, I think I just enjoy it and having kids with intolerances it became important to improvise, so I've just learned to do that as well! I spend a lot of time in the kitchen lol, even before we moved off grid, we ate a lot more convenience foods but I still enjoyed cooking, so I think its just something I enjoyed and then expanded on :D

The beef trim should be cheaper to buy as they have not had to cut and mince it up. Have you asked the butchers what they sell this for?

Costco sells it for the same price as their beef, I don't mind, its the same product, but it allows me to use it how I want to use it :D and Its very good quality, vacuum sealed up etc.

Ok, using the tortilla press for the burgers is freaking genius!!! My mum bought me a little plastic held burger shaper but it’s fucking useless and I hate using it!

I think I just sought the knowledge because food was so important, especially once I started having kids and more so when the kids had allergies, learning to feed them appropriately and work around whatever was the issue, whether the allergies or small babies etc! :D

Do you find that the stock paste you make works out cheaper than store bought? Or is it a matter of ingredients? I have found some good bouillon powder here in Canada that has (mostly) good ingredients but it is relatively expensive.

It’s mostly ingredients and convenience to make it, I love a good bouillon powder, they add so much to a dish and I do generally buy some because of that, I was going to try one of the diy ones where you use nutritional yeast as the base and see how I liked it, but the paste definitely comes close to flavour depth, though it doesn’t dissolve as well as store bought. Pipe dream.. I reckon making it like I did roasting veg first and maybe the meat and then pureeing it with the salt and then dehydrating/freeze drying would be the perfect solution, but I don’t have the ability to do that :)

No reason as such, carbs are fine (though we do add it to pasta, so its carbs on carbs lol) but if there is a more nutrient dense option that the kids are happy with, then all to the good! :D

@@OurSmallFootprint ok. Just remember “carbs on carbs” is actually a diet culture phase- it’s not based on any rigorous science. Variety is the best way in my opinion- split peas are higher in protein but barley is higher in vitamin k which is needed for building bones- great for growing kids especially if they don’t consume dairy regularly 👍

Great video Nyssa! Stock paste has been on my to do list. The recipe I have just blends all the ingredients, is that all you did in the thermomix or did you cook/heat it as well?

I cook it all as well, cook off all the veg then purée, cook off the salt and spices and meet with the veg again and then purée that as well, much better flavours from it all being cooked :D. (If you google thermomix stock paste there’s heaps of diff versions that can give you ideas on what to add etc)

Heh, I can wash the bowls with the wash cycle but I generally pull them apart and put them on the sink and you don’t want the pins wet etc when putting it back on. I did dough in it yesterday and my second bowl was dirty, so I ran a clean cycle and then used it again, I haven’t used it much! It it worked well!

So they have thought of that! I've never seen one in real life. Doubt I will ever own one as I would need on for veggie and one non veggie. Strict segregation in my kitchen due to my own mental issues with cross contamination. Drives everyone mad.😂😂

@@kimmcvitty3580 you could label two bowls, they have their own blades and lid sets, so you could have one bowl that was strictly veggo and one bowl that was meat, because the blades and anything that could possibly touch the food is all self contained! It worked great when we had to have one kid gluten free :D

But they have a promotion here starting today too, when you buy a machine you get a second bowl/blade/lid set for only $29 (they're $300+ normally) which I feel like is their best offer that they bring out a couple of times a year hehe. just as an FYI! :D

Thank you! I did forget! I double this! 60g Oil 20g Sugar 100g Starter 70g Coconut cream 110g warm water 400g Flour (I've made with Plain/AP and Bakers successfully) 10g Salt 1 egg I throw everything in and knead it in the kitchenaid / thermomix for a good 5-10 mins, till it is silky, slightly tacky to touch but not sticky.

@@Mel-vu9ss Yes! Chicken as well, but slightly diff flavours, as chicken is, I would use probably thyme rather than rosemary and white wine instead of red, just those chickeny flavours. If you google thermomix stock paste, there's a bunch of different versions out there! :D
