A few years ago, I thought that I liked dark roasts, because they have a stronger taste, and I like strong coffee. But then I tried many different roasts, and turns out, I like light/medium roasts a lot more. The thing is, dark roasts usually just taste like "dark roast coffee", they all taste a bit similar. Whereas lighter roasts have way more variety in the taste. And you can still brew strong coffee from lighter roasts.

Fair warning though, you want less cinnamon than you think. Coming from a European, I don't know American taste preference for cinnamon, but adding more than 20-30 of those cinnamon "particles/grains" made the coffee borderline undrinkable for me. Don't forget how absolutely strong dissolved cinnamon is

Reminder; a little additives go a long way. This is coming from an American who will drink anything, you will easily overpower the flavor of coffee and depending on the spice, you will get a cup of bean soup.

I do like cinammon and it is better than adding sugar a lot though I do use a bit of honey, my dad likes it with lemon or lime juice, don't ask me why he adds more acid to it, no explanation, he just likes it that way and is the culprit of me hating dark coffee.

I just put a bit of salt in the grounds. I saw it on Alton Brown's Good Eats. Not too much; you don't want salty coffee, but just a pinch dramatically reduces the bitterness. Nice and simple.

I make it cold-brew. I prep by placing coffee-grounds in paper-filters, fold them up to look like pouches, staple them shut, place them in a mason-jar filled with water in the fridge, and leave overnight. There's virtually no bitterness, its actually like drinking cold-water with a hint of coffee, but the process concentrates the caffeine.

I actually exclusively do cold brew as well, but I just put the grounds straight in the mason jar and add the water, then filter to remove grounds in the morning. It's my favorite way to prepare coffee, as I am not a fan of hot coffee. I always have my cold coffee ready to go :)

YES ive been waiting for a coffee episode on Food Theory for ages now!
I really like this episode for different reasons. Not only the science behind different techniques but also how most American people drink their coffee and how they brew it while being Australian myself. I'm used to having milk in my coffee and having a cappuccino most days and having a smoother and richer, while still keeping the strongness of the espresso. Would love to see Santi try different Australian coffee and how different it is to American coffee. :)

My favourite coffees are grown in volcanic soil. The best I've tasted is from Kona Hawai'i. Least bitter. Least acidic. Allowed you to experience the subtleties. Also you scalded the milk. Add coffee to milk just like you added coffee to sugar.

You can make espresso milk without an espresso maker. Almost. You need a French press and how ever much mIlk you need for your drink, and the press. Now take you milk and microwave, boil, cook it idk etc. Then pour you piping milk in the press. Do 5 full presses and then fast press it until it’s foamed to you content. :)

One thing you didn't test was light/medium/dark roast. I've heard that dark roasts should be ground finer than lighter roasts, so the darkness of the roast might affect your result for the grind size.
@mahfudzk I'm no expert, the instructions on my espresso machine just recommended smaller grind sizes for dark roasts.

1. you should try different types of honey in it. im curious on how each one makes it taste, and 2. cream is preferable than milk. i find milk can make it too watery and taste weird.

I like mine cold so I add ice cubes before adding the milk straight from the fridge, I brew my coffee with a strainer, paper filter, and electric kettle water. Placing the grounds on the paper filter that sits on the strainer. It isn't as hot as usual brew and it tastes so good.

cheap pour over coffee maker from Walmart does wonders, comes with a wire basket but just add a paper filter over it to help keep out the finely ground coffee and its pretty easy. takes less time than a normal coffee maker but tends to make much less. Worth it thought for the flavor alone. makes a very smooth cup of coffee.

Do coffee shops do something different with iced coffee to make the milk not ruin it, or use a different type of coffee? The bit with milk at the end confused me. Then again I have Oat milk so maybe that's a bit different too. Great video! I think metal instead of paper aeropress filters are worth a shout too, some coffees are better without such a fine filter I find, like with robusta bean coffees.

I was just wondering why they were only using milk and not even considering creamers. Personally, I've always used creamer because actual milks seem to dilute it and make it taste "watery" to me. Not sure why, just does. Plus, you don't need to add sugar then.

I'm glad you mentioned temperature. Please don't add freshly boiled water to your coffee grounds. It burns the beans and produces a bitter taste.
