This. This Karaage Wrap has me WHIPPED! It is delicious. It is delightful. Most of all, its easy to make! Seriously everyone, give it a shot. It's not terribly expensive to make and with a little bit of love you can make a lot of people happy.
The marinade. The batter. The Sauce. The pancake.
I'm going to make this again. I will make it BETTER!
The Breading:
1.5 Cups AP Flour
1/2 Cup Potato Starch
2TBL Garlic Powder
1.5 TBL Chili Powder
2tsp sea Salt
1tsp Black Pepper
Marinade:
One Large Orange, skin removed
3oz Lemon Juice
6oz Ponzu
1/2 Large yellow onion, diced
1 clove garlic
1 tap sea salt
1 tsp black pepper
1tbl Sesame Oil
Blend until smooth in any blender, pour onto chicken to cover.
16oz Chicken Thigh, cut I to 1/2 inch cubes
Marinate over night.
Slaw:
1 - head of cabbage, shredded
1- bunch cilantro, chopped
1 - bunch Green onions, sliced
1 - hot house cucumber, sliced
1- cup rice vinegar
1 tbl - garlic powder
1tsp - chili Powder
1tbl Sesame Oil
Salt and Pepper to taste
Toss the entire salad until completely coated
Pancake:
1.5 Cup Kodiak Pancake mix
1.5 Cups water
1 whole egg
1.5 tbl vegetable oil
1/2 bunch cilantro
1tbl salt
1tsp black pepper
1tbl Garlic Powder

This is a nice take on the dish from the show. I’ve made this dish from the show using the correct Vietnamese style. The banh xeo wrapping is definitely different from what you’d be getting from the one you made. Also lettuce and herbs are used because that is how banh xeo is typically served, and of course can’t be missing out on the delish fish sauce mix made to go with it. Just simple, fresh, and delicious pairing with the karage.

Damn man you’re really good at cooking! But I am confused at one thing, you said you’re a chef at a bakery right so I’m confused as to how much you know about a lot of culinary arts other than baking? Do you only bake cakes and bread at your bakery or?

If u don't plan on specialising or unsure of a cooking style learning from various kitchens is a way to go, the skills u learn and type many types of ingredients u may encounter just gives one so much to use at a later date

Just wanted to say thank you. I have this lazy cabbage stir fry I make when I'm on a budget, and just cutting the veggies differently like how you cut for you slaw made a huge difference. The prep time is usually slow and boring. Even fast forwarding it instead of skipping it is educational. Thank you.

I was looking forward to seeing you make a bahn xeo. Don't get me wrong your crepe-pancake looked amazing but I have made those before (actually went on a huge crepe kick after visiting France where crepe makers are everywhere). I have just started getting more into Asian fusion flavors lately and I was hoping you might inspire me to take a swing a bahn xeo. I tried one a year ago at a Vietnamese restaurant at the recommendation of the chef when I asked about something different. It was exactly how you described yours last episode. I actually was against the idea but listened to the chef and was completely blown away by it.

@@CHEFPKR The one I had was more fluffy than the wrap one looked. It was closer in looks to Soma's egg souffle than the wrap. It also had a super hard sear on one side which I thought being eggs wouldn't work. I also thought the bahn mi-like veggies put inside a light egg dish would clash. I was wrong on several accounts that day. I think after thinking about it I will go get a bahn mi and a bahn xeo for lunch.

Was there specific content to look for if using pancake mix? Also, is karaage usually double fried? If so, I never realized that. Random off question, how many tattoos do you have?? The "bánh xèo" in the show had a thinner batter. The pan must be extremely hot so the batter will sizzle when u put it in the pan ( which is why they are called sizzling cake "bánh xèo" ).

Hi... Just wanna ask this.. And hope for you to answer :). I miss bought the flour... Instead of buying a.p. flour i bought cake flour... :(. Is it okay to use cake flour with cornstarch?? To use for karaage?

It should be okay, but it doesn't hold up as well as AP. Give it a shot, but don't let your flour get too hot. Use a little more starch too.

Karrage is just fried chicken right. My method is submerged the chicken thighs in light soy sauce, some salt and pepper and marinate it for 6 hours. I use cornflour as a coating for the frying. I use rice paper and cabbage. So is basically just a fried chicken wraps

Essentially, yes. However, the Karaage method revolves around using a combination of both flour and start and frying in a litgher oil. The result is an incredibly light and flakey breading

You make me WANNA try a recipe. I'm a lazy cook...okay, I just plain don't like to cook; sometimes, the act of toasting bread, nuking a micro-meal, making a PB&J, or boiling water, makes me WANNA whimper (so, prep, marinade, cooking, etc....yeah, no). I respect the rule on cleaning surfaces after cutting up chicken, but I have observed many places in third world countries where I have been and nobody would even consider that and nobody really gets sick from it either. So I dont see it so badly eventhough I understand it. Especially if you are at risk of doing that to a large group of People at once.

@@simonandriessen8761 That makes sense, though the focus on it seems extreme at times. I mean I even know that from Worst Cooks in America Anne Barel, who wont even try improperly cooked chicken or meals prepared on the same board as the chicken. There is careful and there is overboard, though I guess you have to stress the importance if you are teaching.

You should! It's super easy to make, just need some patience with it. Also, wrap it in whatever you want!

This is like a portable southern style fried chicken. Fried chicken, coleslaw, and instead of waffles you use crepes. Genius!
