This is a nice take on the dish from the show. I’ve made this dish from the show using the correct Vietnamese style. The banh xeo wrapping is definitely different from what you’d be getting from the one you made. Also lettuce and herbs are used because that is how banh xeo is typically served, and of course can’t be missing out on the delish fish sauce mix made to go with it. Just simple, fresh, and delicious pairing with the karage.

Just wanted to say thank you. I have this lazy cabbage stir fry I make when I'm on a budget, and just cutting the veggies differently like how you cut for you slaw made a huge difference. The prep time is usually slow and boring. Even fast forwarding it instead of skipping it is educational. Thank you.

I was looking forward to seeing you make a bahn xeo. Don't get me wrong your crepe-pancake looked amazing but I have made those before (actually went on a huge crepe kick after visiting France where crepe makers are everywhere). I have just started getting more into Asian fusion flavors lately and I was hoping you might inspire me to take a swing a bahn xeo. I tried one a year ago at a Vietnamese restaurant at the recommendation of the chef when I asked about something different. It was exactly how you described yours last episode. I actually was against the idea but listened to the chef and was completely blown away by it.

@@CHEFPKR The one I had was more fluffy than the wrap one looked. It was closer in looks to Soma's egg souffle than the wrap. It also had a super hard sear on one side which I thought being eggs wouldn't work. I also thought the bahn mi-like veggies put inside a light egg dish would clash. I was wrong on several accounts that day. I think after thinking about it I will go get a bahn mi and a bahn xeo for lunch.

I finally made my own twist of this dish... but since I don't really like mayo, I use sweet-sour sauce instead. Using tomato, chili, lemon, vinegar, salt, and honey (and some corn starch to thicken it). The karaage is pretty basic, I didn't change anything from the recipe. But the wrapper I made using rice flour, salt-pepper, coriander, and garlic powder (yes I love garlic too!). And instead of using cabbage, I use lettuce instead (it just happens to sit inside my fridge).

1:11 i heard a long time ago that plastic cutting boards can absorb germs/bacteria or something, so it's best to use bamboo cutting boards since they have some self sanitization properties.

That's true after hard use, but I do still use them for poultry as it's easier to clean. I rotate mine every year or so.
