Makes: 1 1/2 to 2 cups
Prep time: 15 min
Cook time: 2 min
Ingredients:
6 cups packed (1 pound) carrot greens
5 teaspoons Shaanxi vinegar (or substitute Chinkiang black vinegar-see note)
4 teaspoons light soy sauce (see note)
1 tablespoon minced garlic
1/2 teaspoon minced fresh Thai chiles

Here in Japan, turnip tops, daikon tops etc are commonly used as a green veggie. Often added to rice before it is cooked to add interest to plain white rice. Sadly, carrots often have there tops removed here. I’ll look for them. This looks amazing. We need to reduce waste and eat more vegetables at the same time!

Turnip greens are a very common boiled vegetable in the US South. Boi Stew with some pork meat then splash hot sauce like hot pepper vinegar.

The biggest problem is most stores are pre packaging vegetables now. you can't pick your own you just have to hope for the best that the package of vegetables doesn't have rotten product . Remember when you could choose your own serrano peppers now they are prepackaged in a quantity you don't use before they go bad if half isn't bad already. carrots are prepackaged without the tops. Mushrooms prepackaged with slimy ones hidden in the bottom of the tray. Radishes, habaneros and so many more I virtually stop purchasing majority of my vegetables in stores. Along with the self checkout and the biometric grocery carts stores are becoming a nightmare

We use this exact same process to make spinach salad appetizer in China too! Toss a few peanuts on it to add some crunch it you’re ok with peanuts, also they soak up the dressing really well!

Carrot greens have the best flavor mid-season when you are thinning your carrots. Later they can get more bitter, and will need to be cooked. They are actually more nutritious than the carrot root. It's best to use them as garnishes, part of mixed-greens salads, in stir-fries, added to tomato/marinara sauces, or in stews.

I think I would use carrot tops sparingly, more like parsley as mentioned. However I seek out celery tops for soups and stews. Too many times celery is packaged without it’s greens, which is a shame.

Just soaked the carrot greens a bit to make them crispy again. Chopped them with stems and fried them slightly with chopped ham and onions salt and pepper. Full flavour.remains. You can add tomatoes eggs or anything. But i lile to eat parsley out of the garden raw.

Awsome! I am growing carrots and worried about wasting the greens, it seemed so sad to just turn them under if they were edible. I watched your face closely when you tried the recipe - the flavor made you smile, and THAT is a good sign! Thank you for this idea, I am no stranger to "bitter" greens and vinegars to take advantage of their yum - yet as I watched I could only think how crumbled crispy bacon or crackling would go great on top!! (Sorry to any Vegans- no offense intended)

Did anybody make that? How does it taste like? I’m growing carrots and don’t want to waste those luscious green tops. I’ve added them to salads and made pesto with them. So I must try this recipe next. Thank you.

The carrot tops are very strong in flavor but not half bad. It’s definitely something that would take getting used to in my opinion.

If you absolutely hate the taste of carrot greens and don't want to waste them, you could compost it for your plants or feed to your bunnies/farm animals.

Okay I just made this. It tastes just like parsley to be honest - so if you’re not a big fan of parsley ... It wasn’t too bad. My husband hated it though.

I tried to regrow my carrot tops. They have already sprouted a little bit. If they sprout taller later, I'll try this recipe. Does this mean I can use the carrot greens as a spinach substitute?

Mostly Korean cooked, more like the blanched vegetable recipe, and then added sesame seeds and oil at the end.

Why do people through away good food? As for people who use parsley as a garnish, I’ve made a salad using it instead of lettuce. So carrot greens would work too. What’s wrong with people?

I know i’m a year late and I can only speak for Americans, but here people just don’t know what to use of these leaves and it never comes to people. Heck I never bought carrots with the leaves. I’m just now looking this up because for the first time I grew my own carrots and I don’t want to waste anything
