I was married to a puerto rican over 30 years ago. We divorced after 5 yrs. But I always enjoyed the holidays with his family. It was such a bonding moment. I would help prepare the pasteles, and we did it old school. Since the divorce I never lost the taste for a puerto rican celebration meal. I make the rice, pernil, but the pasteles I would buy from someone. So many fond memories from then. My current husband, who has jamaican background combine our favorite dishes from each culture. I am black American. Celebration meals in our family have 3 different cultures. What fun.🎉🎉🎉🎉🎉❤❤❤

Outstanding! We're not Puerto Rican, but we hate the normal Thanksgiving meal, so we always eat food from other cultures during the holidays. This year, we included pernil, arroz con gandules, and coquito in our holiday spread. The recipes we used , and the result we achieved, were very similar to yours, and my son and I agreed that we could easily eat pernil and rice every day. LOL Good stuff! I loved how thoroughly you explained what you were doing and how evident your fondness for your family and culture are. Thanks for sharing!

This brings back so many holidays memories with my kids father's family. I try to keep their grandmother and great grandmother's recipes alive and make some every Christmas. I make arroz con leche (w/coconut milk), coquito, and arroz con gondules, but I do skip the olives!! Looking forward to this year's Noche Buena at my daughter's house with my kids, son in laws and grandgirls. Thank you for these recipes!

It’s wonderful to enjoy, embrace your customs in food preparation of your Country. The love, the care, the tradition is very important to pass from one generation to the next. I have close friends I consider family. They are Puerto Rican. They’ve taught me a lot of their cooking. I’m American Italian decent. I share my customs with them. A food marriage made in heaven. I feel like I am one of the few boricuas who prefers pasteles de yuca over the regular. So, I love love love that you chose to show the world how amazing it truly is. :D And for our arroz con guandules my mother started using Dominican longanista instead of ham and it's amazing.

This video is so dope and Chef Cesar is the best part about this channel! Glad to see someone putting out real, authentic Puerto Rican food. Felt a little weird to have Chef Cesar’s Puerto Rican Christmas interrupted by someone who isn’t him and isn’t Puerto Rican hawk a product though. Y’all should have the chef present these things, and do so in a natural way so that it doesn’t distract from the video!

This is so authentic. The traditional dishes which are always served for the Holidays. These dishes always bring in the season. My fave, by far, is the Pasteles. It’s a lot of work doing it old style but, in the end you get ur reward. Yummy in the tummy.😊

Loving this! My late granpa was Puerto Rican, and some of what you made here, I grew up with. Never realizing the PR heritage behind it! (Both my parents look Black, and this is my mom's dad I'm talking about). Thank you so much for bringing back some good memories! I'll for sure be making some of these dishes in the near future. I made this for my family’s Christmas two years ago and still get requests. It started a new savory tradition of exploring different cultures rather than enduring the ubiquitous turkey or ham. (Of course we still had greens and Mac and cheese!) I didn’t know about the pasteles. Something to add in my 2.0.

Saludos desde San Germán,PR. Aprendí a cocinar con mi abuela que aprendió de su mamá. Era cocinera experta y nos enseñó que los pasteles no llevan garbanzos ni pasas. Eso le cambia el sabor rradicional. Es cuestión de que parte de la isla te criaste. Hacía el mejor coquito que he probado. Era famoso en el área. Yo me he apegado a su estilo tradicional y típico para seguir la tradición, mi mamá también cocina bien rico pero como la comida de la abuela ninguna. Ya mora con el Señor. Tengo 60 años y no olvido su sazón. Feliz Navidad.

I make this meal. My mouth is watering as I watch. I retired in Germany can't can't always get my PR supplies. I highly recommend that you cut the skin like a checker board, not all the way through the fat. This gives you precut pieces, omg, better than a football. Lol I also cut off all the way so I can get underneath laid out. The more the better, after all that's the best part. Right?

I bought a rubber tub that looks like a manicotti you put the garlic inside of it then you put it on top of the counter and you roll your hand on top of the rubber tube with the garlic inside and all the pill comes off is amazing. It works great.

the Pernil looks a lot like our Crispy Pata. the banana leaves is something we use as well for packaging our native desserts. as for the Yuca, I think we have something similar (I think it's suman. however, we don't pair that with rice and a side of meat. it's basically a dessert) kaldero, we use this term too!

As a Dominican growing up in NYC in the 70’s and 80’s the banana leaves were not available like they are today. My mom used wax paper because parchment paper wasn’t available for the pastel en hoja. So we used what we had. But the plantain or banana leaves is the way to go, it imparts the flavor of the leaves that parchment paper can’t do. So if you are going to invest time and money, do it the old fashioned way. It is an acquired taste, so not everyone is going to like it. But try it at least once.

The best garlic hack I've ever seen is to get a bag of pre-peeled garlic and throw it into a food chopper chop it up and then put it in a baggie then take a knife or a chopstick and Dent them into one serving portions and put them in the freezer it really works! Cachucha peppers, wish I could find them here! Culantro, Mexican corriander.

Emmmm peeling garlic, especially if you're going to pound it is super easy... Just press on the cloves with the flat side of your butcher knife and voilà, it pops out!
